View Full Version : Butter Crunch Lemon Bars or Easy Lemon Bars?

I want to make some lemon bars for Easter and haven't tried either of these recipes. So, my question is which one is better? Any input is appreciated!

I have made both, and both are very good and easy, but I think I would lean towards the buttercrunch bars.

i have only made the easy lemon bars and they are great - everyone loves them and they really are easy!

It's been a few months longer since I've had the easy lemon bars so I can't give an honest preference, but if I had to choose, I'd make the buttercrunch ones.

I like the crust much better on the butter crunch lemon bars and I think they hold up better the next day. I don't recall them being any more difficult than the easy lemon squares.

I haven't made Easy Lemon Bars but I made the Buttercrunch Lemon Bars and thought they were horrible. For that reason, I vote for Easy Lemon Bars. If you do the other, go easy on the nutmeg/mace -- it was a weird combination.

I loved the Easy Lemon Bars- they were supper easy and delish. But the crust did get very hard on mine. Has anyone made the Easy Lemon Bars with a graham cracker crust instead?

Wow, this looks like a close call! I think I will go for the Easy Lemon this time and will try the Buttercrunch next time. Will let you know how it goes. Thanks for your wonderful input, I appreciate it.

I have found the recipe for the Buttercrunch Lemon Bars but I can't find the recipe for Easy Lemon Bars. I have searched on the Cooking Light homepage and also here on the BB what am I doing wrong?

Here it is:

Easy Lemon Squares

Crust:
1/4 cup granulated sugar
3 tablespoons butter or stick margarine, soft
1 cup all-purpose flour

Topping:
3 large eggs
3/4 cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoons powdered sugar


Prep Time: 15 minutes
Cooking Time: 40 minutes

Preheat oven to 350º.

To prepare the crust, beat 1/4 cup granulated sugar and the butter at medium speed of a
mixer until creamy. Lightly spoon 1 cup flour into a dry measuring cup; level with a knife.
Gradually add 1 cup flour to sugar mixture, beating at low speed until mixture resembles
fine crumbs. Gently press mixture into bottom of an 8-inch square baking pan. Bake at
350º for 15 minutes; cool on a wire rack.

To prepare topping, beat eggs at medium speed until foamy. Add 3/4 cup granulated
sugar and next 5 ingredients (3/4 cup granulated sugar through salt), and beat until
well-blended. Pour mixture over partially baked crust. Bake at 350º for 20 to 25 minutes
or until set. Cool on wire rack. Sift powdered sugar evenly over top.

I've made both, and prefer the lemon bars. I've also made a Betty Crocker (or was it Joy of Cooking?) lemon bar recipe, and the crust was kind of hard on that too -- maybe just the type of crust it is.

I made the Easy Lemon Bars on Easter and they were wonderful. My crust was a bit dry though and crumbled easier than I would have liked. Any suggestions for next time?
