I found a thread where this recipe was mentioned, but it was so good I thought it deserved a thread of it's own.

We thought this was fantastic! It had a nice crunchy coating. Even my picky kids loved it. A nice departure from the usual oven fried chicken. I used chicken breasts instead of dark meat chicken (we don't care for the dark) and cut it into strips. Also, I didn't have panko, so I just subbed some Italian breadcrumbs that I had on hand. I really loved the flavor that the coconut milk and hot sauce gave it and it made the chicken so moist and tender. Will definitely repeat this one.

This does sound awesome! I like coconut shrimp, but never thought to make it at home w/chix (and w/out the deep-fried guilt!)

I made this a couple of weeks ago. Although we liked it, I probably won't make it again!

Sorry. I did do a search, but I guess I left out the hyphen. I tried to be careful :(

Someone on that thread mentioned that the photo in the magazine didn't look so great, and I agree. I almost passed on this recipe because of that, but mine looked much better than the pic did :D
