I am making shrimp scampi one night this week and I am wondering what to serve as a side dish(s) with it. I have never eaten shrimp scampi, so I am not sure what would be a good compliment with it. Is it something served over rice? Any ideas?

It is good over pasta, or served with bread to "sop up the juices". I would serve a simple green salad and have fruit for dessert. Id also have a dry white wine to help counter the richness of the recipe! YUM! ENJOY!

When I make scampi, I usually serve it with a side of wilted spinach and another bright colored veggie (like carrots) to give some color. I have a loaf of crusty European peasant loaf on hand for "sopping"... and I second the suggestion for a good white wine!

I do have french bread to serve with it. Sounds very good. I am using the recipe from a cooking light cook book.

Shrimp Scampi

INGREDIENTS FOR 6 SERVINGS:
2 pounds large unpeeled shrimp (48 shrimp)
3 tablespoons margarine
1 cup chopped red bell pepper
8 garlic cloves, crushed
1/2 cup dry white wine
1/4 cup minced fresh parsley
1/4 cup fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Paprika
6 cups hot cooked angel hair (about 3/4 pound uncooked pasta)
INSTRUCTIONS:
Peel shrimp, leaving tails intact. Starting at tail end, butterfly underside
of each shrimp, cutting to, but not through, back of shrimp. Arrange 8 shrimp,
cut sides up, in each of 6 gratin dishes; set aside.
Melt margarine in a small skillet over medium heat. Add bell pepper and
garlic; saute 2 minutes. Remove from heat; stir in wine, parsley, lemon juice,
salt, and pepper. Spoon wine mixture evenly over each serving; sprinkle
paprika over shrimp, and broil 6 minutes or until shrimp is done. Serve with
angel hair pasta. Yield: 6 servings (serving size: 8 shrimp and 1 cup pasta).
