Does anyone know a good cookbook that helps you learn how to utilize meat substitutes (seiten, tempeh, etc)? I would love to use them but have no idea where to start.

Have you tried the Moosewood Collective Cookbooks? I own two: Low-Fat Favorites and Moosewood Cooks at Home. They are WONDERFUL books and include some tofu/seitan/tempeh recipes in each. What about Deborah Madison's Vegetarian Cooking for Everyone?

I know that there is a tofu cookbook, I can't remember the name. You could probably find it on Amazon.

I think a story on how to cook meat replacers would be a GRAND idea. (I would add TVP to your list.) I think so many people are afraid of them -- maybe they'd be willing to try if they had some yummy-looking recipes to choose from. I was just thinking today that in my fridge, freezer and cabinets, I have 4 packs of tofu that are just sitting there because I'm too chicken to do anything with them.

You could also checkout some of Dr. Weil's recipes in his book "Eating Well For Optimum Health" or on his website at www.drweil.com. (http://www.drweil.com.) It was because of one of his books that I started eating tempeh and love it! My favorite way to eat tempeh is to marinate it in worcestershire sauce and brown it in olive oil, then eat it on a bun with the usual hamburger fixings.
