View Full Version : What is your favorite pudding recipe?

Pudding is my comfort food. I love pudding! So it was with much interest that I happened upon a segment on the Travel Channel about an Inn in England that specializes in puddings. I only caught the last part of the segment, but from what I could tell, this inn would make 8 or 9 different kinds of puddings on a particular evening, and serve it with much flourish to the guests. Each guest was given a card with all the puddings listed, they could only have one serving at a time, and they would rate each pudding. At the end, the host would announce which pudding "won". It was a popular/famous inn, but I didn't catch the name of the place. Did anybody happen to see that segment on the Travel Channel? If so, what is the name of that hotel?
Also, while I'm on the subject, I was fascinated to see there were so many different kinds of puddings! Puddings I never even heard of. And not your traditional rice, banana or tapioca puddings, but puddings with names like "Spotted Dick", "Syrup Sponge", and "Lord Randalls Pudding". They looked delicious!!
So I thought I would ask you to post any of your favorite pudding recipes. I would love to try any pudding recipe you might recommend.

I could probably find information on that Travel Channel segment for you, but do you remember when you saw it? Was it today? And about what time of the day was it?
Sorry, I don't have much for you in the way of puddings, but I wonder if those English puddings are more like cakes. My idea of pudding is Jell-o instant sugar free chocolate....(sorry!).
I must say, though, I made an old CL recipe for Double Berry Tapioca Pudding a few weeks ago, which I thought was great. Let me know if you'd like me to post it. It had raspberries and bananas in it.

Grace, I think I saw it yesterday, possibly Friday. It would have been in the late afternoon.
You're right...some of the puddings looked liked cakes, some were served with sauce. I guess I was just surprised at the variety of puddings there were, and how delicious they looked! I thought it would be interesting to try a new recipe.
As for the Double Berry Tapioca Pudding, I would appreciate it if you could post the recipe - especially if you recommend it. There's nothing like a delicious Tapicoa pudding--and one with berries sounds wonderful! I would call that non-typical. To me...anyway. http://www.cookinglight.com/bbs/wink.gif

Well, I checked for the show you described on the Travel Channel website, and unfortunately, I found nothing. Sorry. I would have like to have seen that show myself.
Here is the recipe, if you want to try it. I thought it was good, and I'd make it again. I like that it has a lot of fiber in it, and next to no fat.

Double Berry Tapioca Pudding
SOURCE: Cooking Light YEAR: May 1994 PAGE: 137
INGREDIENTS FOR 4 SERVINGS:
1 (10-ounce) package frozen raspberries in light syrup, thawed and undrained
3 tblsp. sugar
2 tblsp. quick-cooking tapioca, uncooked
1/2 cup unsweetened orange juice
2 cups quartered fresh strawberries
1 small banana, peeled, halved lengthwise and sliced (about 1/2 cup)
1/4 cup vanilla low-fat yogurt
INSTRUCTIONS:
Drain raspberries, reserving syrup; set raspberries aside. Combine reserved
syrup, sugar, tapioca, and orange juice in a medium saucepan; let stand 5
minutes. Bring to a boil over medium heat, stirring constantly. Pour mixture
into a medium bowl; let cool 15 minutes, stirring occasionally.
Stir in raspberries, strawberries and banana. Spoon 3/4 cup tapioca mixture
into each of 4 individual containers; cover and refrigerate until thoroughly
chilled. Top each serving with 1 tablespoon yogurt. Yield: 4 servings

Calories 192 (3% from fat) Protein 2.1g Fat 0.7g Carb 47g Fiber 7.5g

By gosh---I found it! I went to Google and typed in
"travel channel" pudding England
and found this site: http://www.puddingclub.com/
I believe this is it. My sister is traveling to England this summer, and she asked me to find this hotel for her. She thought is sounded interesting. As for me...I was just looking for the recipes. They post pudding recipes once a month..the current posting is "Syrup Sponge".

A lot of the English puddings are steamed -- delicious but more work than our typical milk based ones. They are thicker--more like a wet cake. I don't have any recipes but would love some besides plum pudding.

My favorite pudding would have to be plain ole tapioca, warm. Banana is also great. Grace's recipe sounds good, I'll have to try that.

Here's my favorite low fat, low calorie Tapioca recipe:
Tapioca **
Serving Size: 6
3 tbsps tapioca
2 3/4 cu milk, skim
1/4 cu egg substitute beaten
1 tsp vanilla
10 pkgs aspartame sweetener (NutraSweet)
Mix tapioca, milk, and egg in medium sauce pan let stand 5 minutes.
Cook on medium heat stirring constantly until mixture comes to a FULL boil.
Remove from heat, pour into a bowl and let cool for 15 minutes.
Stir in NutraSweet and vanilla.
Cover, and cool.
Serves 6
Serving Sixe 1/2 cup
Per serving: 80 Calories; 1g Fat (14% calories from fat); 6g Protein; 12g Carbohydrate; 2mg Cholesterol; 78mg Sodium
For a variation I add one cap full of Orange extract to the pudding. Then add low calorie Blueberry or cherry pie filling to the bottom of the serving dish with more added to the top!
