View Full Version : Mmmmm...yummy, easy, versatile chicken dish.

Chicken with Pesto, Goat Cheese, Artichokes and Roasted Red Peppers.

I threw together something that turned out quite well. It's not exactly a new combo of ingredients, but maybe it's new to you and it's new to me in that I usually don't cook chicken this way. :)

I think this combo has lots of potential - I would use all of the ingredients to make a pizza (might add some bacon) and I would use the ingredients minus the chicken as a crostini topping (the kids even requested that I do the crostini version as an appetizer this weekend - I am always happy to fulfill their more gourmet requests!).

Anyway, all I did was take four chicken breast halves, throw them in a pyrex baking dish and smear them with some homemade pesto (about 1 to 1 1/2 tablespoons per chicken breast half). Then I topped them with chopped marinated artichokes, slices of roasted bell peppers (from a jar), and some goat cheese. I then drizzled them with a little of the oil from the artichoke marinade. (I make pesto with very little oil, so I would definitely not drizzle the artichoke oil if you are using an oily pesto.) Then I baked them for 45-50 minutes at 350º and voila - easy and yummy.

I think I'll take this topping approach to cooking chicken more often. It seems like a fun, easy way to throw together a yummy meal and it also is a great way to use up dribs and drabs of things in your fridge and pantry.

Alysha, that recipe sounds delicious. I have to add it to my to try list. Can't get enough amazing recipes, and why is that?

We made a variation of this last night for dinner and it was great. We covered the chicken breasts with store-bought pesto, topped the chicken with a jar of roasted peppers, added slices of goat cheese, and drizzled with olive oil. We baked the chicken for 30 mins (I had pounded them to be of equal thickness so they cooked quickly) and then tossed the whole dish with some bowtie pasta. Very tasty and very easy. We'll make again. Thanks for the recipe!

I tried a variation of this on pizza, but didn't have any goat cheese. It was pretty good, but I think it REALLY needed the goat cheese to be great. The kids kept picking off the artichokes, so I'm not sure how much they enjoyed it - but they loved the baked chicken version. :rolleyes:
