April cactus recipes?

Did anyone get adventurous and make the cactus recipes featured in the April issue?

I can laugh out loud thinking about finding cactus in Columbus, Ohio. At least, my side of town. I would love to hear reviews tho'.

I actually found fresh cactus at the Super Walmart. Haven't tried any of the recipes yet, but I'm thinking about it.

donleyk - Actually, you can get cactus paddles in Columbus. I've seen them at the Kroger in Town & Country, and they're usually available at Frontera Nueva, the Latino market on S. Hamilton Rd.

Phoebe I heard the Latino population in Columbus is growing quite fast. I forgot the name but there was a latino market and they had cheeses and many things. I did noticed in a supermarket they had plantains and some latino products too when I went last summer.
I was talking to some cousins and they said mostly Mexicans are populating areas in Columbus. Hopefully that translates to some good Mexican cooking in the near future? Mmmm http://www.cookinglight.com/bbs/smile.gif

I did try one of the recipes - the confetti cactus salad (I think that's the name). I was not impressed and haven't been motivated to try any of the others. I had tried it once in small Mexican restaurant - and although it was awhile ago (and just a bite of a friend's dish) it seemed much better. So I decided to leave cactus to the professionals!

Oh - I live in Portland and found it at Safeway (a month ago)

I live in Southern CA with Hispanic markets all over the place and although I am adventurous with food, I have absolutely no interest in trying these recipes or eating cactus.

I have a tough enough time just finding chipotles in adobo sauce -- I have to drive clear across town. So I haven't even attempted to find cactus! If someone were to tell me one of the cactus recipes is worth it, I might try, but until then there are plenty of other recipes I want to make.

At least you can find chipotles (even though its a distance). I have to import them (via Mom) from Washington State. I'm making a trip over next week and will be taking an extra bag for all the things I can't find here (Hawaii). As for cactus, I don't think they have it here. Lost of asian type things for cooking, but haven't located cactus.
