Any one with suggestions on how to prepare a meal with the leftovers?

I often serve leftover lamb with saffron rice and sultanas as an Indian dish. If the lamb needs a bit of "spicing" up, I'll often add curry or a bit of garlic. I serve it with na'an and cucumber sauce.

If you're in the mood for something a bit less unusual, lamb makes delicious stew... and great sandwiches!

sultanas... white raisins http://www.cookinglight.com/bbs/smile.gif I find they are better suited to cooking (especially in savory dishes) than regular raisins.

Or at least a facsimile thereof. Heat the lamb and slice thinly, and pile on a pita. Add onions, lettuce, tomatoes, and definitely don't forget the tsatziki!!! http://www.cookinglight.com/bbs/biggrin.gif

I have a recipe I've used for left-over lamb for years. If you want me to send exact ingredient measurements, let me know and I'll do it from home tonight.

Basically, you prepare rice (1 cup uncooked) using chicken broth instead of water adding a bay leaf and some lemon juice with the rice.
Then, in a skillet saute diced green pepper and diced onions. When they're tender, add diced lamb (about 1.5 to 2 cups), thyme, salt and pepper in the skillet and saute about another five minutes.

Combine the rice and lamb mixture in a casserole and bake (I can't remember whether this is covered or uncovered because I made this last night but won't cook it until tomorrow - I think it is covered or it might dry out) in a 350 degree oven for about 30 minutes.

You're supposed to layer - rice, lamb, rice, lamb, rice - but I just mix it all together. Hope this helps.
