Anyone out there know of a relatively "low fat" recipe for an oatmeal and peanut butter cookie. I really love those oatmeal/peanut butter cookies that the Girl Scouts put out every year, but have never come across a recipe that has this combination.

Thanks for any help you can lend!!

Oatmeal Peanut Butter Cookies

3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter -- softened
1/2 cup peanut butter -- smooth or chunky
1/2 cup sugar
1/2 cup light brown sugar -- packed
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
3 tablespoons butter -- softened
1 cup confectioner's sugar
1/2 cup smooth peanut butter
2 1/2 tablespoons heavy cream

In a large bowl, cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well

In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.

Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.

To Make Filling: Cream 3 tablespoons butter or margarine with the confectioners' sugar, 1/2 cup smooth peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

I don t think I ve ever tried this type of cookie! Deprived, I know. I can t wait to try them!
Gee, think we re going to have a bit of a sugar high around here this weekend. I still plan to make the mocha fudge pie, and if I manage to fit in a batch of cookies, too, well ... I guess we ll be in orbit. Time to find some well-balanced CL meals to go along with it all ... ; )

I have gotta tell you that these were absolutely delicious. As I had mentioned, I had never tried this type of cookie before - guess I d been missing out on something my whole life! I cut down the proportions for the filling (apologies to any cookie purists!!) and that worked out fine, because it was so flavorful. Anyway, this one was a real hit so - it ll be a real keeper! Thanks, guys ... you ve done it again!

P.S. Did you know there are already 350 posts on the Great Food board? This site is the best ...
