I made Chicken with Apples and Almonds for supper tonight and boy was it good. It called for a Reynolds hot foil bag which I didn't have, so I made a bag with aluminium foil by folding it over and sealing all openings. I'm not sure where I got the recipe but I will very definitely make this again. I used Granny Smith apples unpeeled, Vietnam extra fancy cinnamon from Penzey's and light brown sugar. Really good!

Chicken With Apples And Almonds

1 reynoldsŪ hot bagsŪ foil bag -- large size
6 boneless skinless chicken breast halves -- (1 1/2 to 2 lb.)
salt and pepper
2 medium apples -- each cored and cut into 8 wedges
1/2 cup packed brown sugar
1/4 cup dijon mustard
1 tablespoon flour
1/4 cup sliced almonds
ground cinnamon

PREHEAT grill to medium-high or oven to 450°F.

OPEN foil bag. Sprinkle chicken with salt and pepper; arrange in foil bag in an even layer. Top chicken with apple wedges. Combine brown sugar, mustard and flour; spoon over apples and chicken. Sprinkle almonds and cinnamon over ingredients in foil bag.

TO SEAL, double fold open end of foil bag. Place foil bag in a 1-inch deep pan.

TO COOK, slide foil bag onto grill or leave foil bag in supporting pan and place in oven. GRILL 20 to 25 minutes in covered grill OR BAKE 40 to 45 minutes in supporting pan in oven.

USE OVEN MITTS to cut open foil bag with a sharp knife. Carefully fold back top of foil bag, allowing steam to escape.

Daniele, thank you for the recipe! i haven't combined chicken with apples in a dozen years or more, but i know they are wonderful together, and the almonds make it all the more appetizing. there is nothing in this that i don't already love, and the best part is that i usually have most of it on hand. will try soon.

Believe it or not, I ate it all by itself. The reason for that is that I am counting calories to lose some weight I put on these last few months and because I have been eating snacks between meals, I had not enough calories left to eat anything with it (I needed to reserve some calories for a snack while watching American Idol :D :D

I think it would go nicely with rice because it makes a bit of sauce which you definitely don't want to leave behind YUM. I dredged every chicken piece in sauce, so I didn't waste a thing. I otherwise would have made some green beans to go with it.
