View Full Version : Do shallots need to be refrigerated?

I bought some shallots at the grocery store and did not use all of them. Do the extras (they have not been peeled or cut into) need to go in the fridge?

No, don't refrigerate them. Treat them like you would regular onions. They keep for quite awhile.

The rule of thumb that helps me with these storage issues is: where did you find it in the grocery store? If it's not refrigerated there, then you don't need to, either. There are exceptions, like apples not being refrigerated in the store, but they last forever in the fridge at home. The guideline is whether refrigeration is a "must" to keep the veggie around for longer than a day or 2.

You know, I'm addicted to red onions and lately (3 mos) been leaving them in the cabinet. I thought the flavor was better than when they came out of the fridge.
Here's the problem: When i cut into them, they're green, like going bad but the outside is firm, looks good, etc. Very frustrating as they are more expensive.
