I could have sworn there was a February muffin thread, but I can't find it ...

So I'm just going to post this on its own thread - which it's worthy of anyway!

These were great! I really loved the texture that the cornmeal provided.

My changes were to use Splenda for half of the sugar, to chop the apples instead of shredding, and to use whole wheat pastry flour for half of the all-purpose. Really, really yummy - one of my new favorites!

Apple Spice Muffins

Amount Measure Ingredient -- Preparation Method

1 1/4 cups flour
1/2 cup cornmeal
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground ginger
1 3/4 cup shredded apple
3/4 cup lowfat buttermilk
2 tablespoons vegetable oil
1 large egg -- slightly beaten
2 teaspoons sugar
1/4 teaspoon cinnamon

Heat oven to 400. Combine first 8 ingredients in a large bowl. Make a well in the center of the mixture. Combine apples, buttermilk, oil and egg in a bowl. Stir well. Add to dry ingredient, stirring just until moist. Divide batter evenly amonst 12 muffin cups coated with cooking spray. Combine last two ingredients and sprinkle on muffins. Bake for 20 minutes or until golden. Remove from pans immediately.
