We're having a potluck and we wanted to make chile con queso, well the lady ran out and bought 2 blocks of kraft cheddar cheese instead of velvetta (supposedly there was none:mad: ) Do you think this will melt okay in the crock pot if we add a little milk to it? We're also adding salsa, if anyone can let me know if they think this is okay I'd appreciate it! TIA :)

If you are melting it in something like chili and salsa, it will work fine. The difference between the two are the Velveeta melts easily and smooth, the oil doesn't separate. The oil in the cheddar will separate and it will firm up if left on it's own. I personally only use Velveeta for cheese sandwiches othewise it's cheddar all the way. Have fun.

I'm quite certain the cheddar will be fine.
I've always made con queso with monterey jack cheese, never Velveeta. I add a bit of half & half and use grated cheese -- and it melts up just fine.

I also have used cheddar and half&half. I use 1/4 cup of h&h per cup of shredded cheddar.
