I made this today for lunch -- I had a friend over. I halved the recipe and it served us generously, and I know there will be enough left over for a friend for lunch tomorrow. I served it with whole-grain bread (nonfat). It was very good -- great for the unfortunate cold weather we've been having! My only trouble was that I forgot to halve the cayenne pepper -- it had quite a bite to it! Glad I decided to use a little white pepper in place of the ground red pepper flakes. I'd include the post for the original recipe, but don't know how. You could do a search for the name of the recipe (minus Jewel's). Thanks for posting the recipe, Jewel!
P.S. I sent my husband to the store for celery early this a.m. so I had it after all. Thanks for the response to my previous posting.
One more thing: I had frozen hash browns in the freezer and used them (thawed) in place of the diced potato. And one boneless skinless chicken breast was about right for half this recipe -- I used the whole thing, which came to a little over a cup.

This is wonderful stuff - I made it (minus crushed red pepper bec dh is a lightweight w/spice), kids loved it as well as some guests. Definitely a keeper! Thanks for sharing Jewel, you're a true gem (heehee) http://www.cookinglight.com/bbs/wink.gif sally

Thanks Jewel. I made this soup last night and it was so yummy and very zippy - just the way we like it. DH is taking the leftovers to work today. Hope he leaves some for me!

We had this last week too. Yum! So cheesy! (that is a compliment of the highest order in our house)
