Every year for my dd's birthday she requests sandwiches and chips.:D Last year I made Smoky Orange Chicken Sandwiches and the year before that I made Barbecue Pulled Chicken with Marinated Cucumbers. I've forgotten what I've made previously.
The sandwiches are for an extended family celebration/party with mostly adults. I'd like to come up with something really great this year. It will be for 20-25 people. It also needs to be a low-fat recipe.
Anybody have any awesome recipes they can recommend??

Chicken and Roast Beef Muffulettas

Olive Salad:
1/2 cup kalamata olives, pitted
1/4 cup chopped fresh basil
2 tablespoons capers, drained
2 tablespoons balsamic vinegar
2 teaspoons olive oil
1 (14 ounce) can artichoke hearts, drained and coarsely
chopped
1 (7 ounce) bottle roasted red bell peppers, drained and
chopped
1 clove garlic, minced
Muffuletta:
12 (1 1/2 ounce) French bread rolls
6 (1 ounce) slices Swiss cheese
12 (1 ounce) slices roasted breast of chicken
12 (1 ounce) slices deli roast beef
6 cups gourmet greens
To prepare olive salad, combine first 8 ingredients in bowl of food
processor. Process 30 seconds or until finely chopped; chill.
To prepare muffuletta, cut rolls in half crosswise. Spread about 2 1/2
tablespoons olive mixture on top half of each roll. Layer 1/2 cup greens,
1/2 cheese slice, 1 roast beef slice, and 1 chicken slice on each roll
bottom; cover with top of roll.
Wrap each sandwich tightly in plastic wrap. Chill up to 8 hours.
Yield: 12 servings. 288 cal, 9g fat, 23.3g pro, 27.9g carb, 2.5g fiber,
49mg chol, 2.4mg iron, 795mg sod, 181mg calc.

Chicken Caesar Salad Sandwich w/ Chipotle Caesar Dressing

Chicken Caesar Salad Sandwiches With Chipotle Caesar Dressing
Chipotle Caesar Dressing:
-- 1/3 cup mayonnaise, regular or low-fat
--2 tablespoons flavorful olive oil
--1 clove garlic
--1 teaspoon Dijon mustard
--2-3 teaspoons anchovy paste
--1-2 teaspoons pureed chipotle en adobo
--1 tablespoon fresh lemon juice
--2 teaspoons white wine vinegar
-- 1/3 cup freshly grated Parmesan cheese
Sandwiches
--4 medium boneless, skinless chicken breasts
--1 tablespoon lemon juice
--1 tablespoon olive oil
--Salt and freshly ground pepper to taste
--12 small inner leaves of romaine lettuce, washed and dried
--4 long crusty Italian rolls, split*
-- 1/4 cup shredded Parmesan cheese
For the Chipotle Caesar Dressing: Make the dressing byplacing the
mayonnaise, olive oil, garlic, mustard, anchovy, chipotle,
lemon juice, vinegar and Parmesan cheese into the bowl of a food
processor.Puree until well blended. Set aside and prepare the chicken.
For thesandwiches: Place the chicken between two sheets of wax paper and
poundjust to flatten. Place in a bowl and drizzle lemon juice, olive oil,
saltand pepper over the chicken. Turn to coat.
Cook the chicken by grilling it over medium heat of a gas grill,
broilingit, or sauteing it on a ridged nonstick grill pan. Cook 5 minutes
per side.Preheat the oven or a toaster oven to 350 degrees.
Open up the rolls and sprinkle about 1 tablespoon shredded Parmesan
overone split half of each roll. Place the rolls in the preheated oven
just long enough to barely melt the cheese and warm the rolls.
Spread the Chipotle Caesar Dressing on the half of the roll without
thecheese. Lay on pieces of grilled chicken, cut into smaller pieces if
you like. Add 3 leaves of perfect romaine. Drizzle on a couple more
teaspoons of dressing over the lettuce. Top with the Parmesan cheese half
of the roll.
Serves 4.
PER SERVING: 473 calories, 24 g protein, 24 g carbohydrate, 31 g fat (6 g
saturated), 57 mg cholesterol, 705 mg sodium, 1 g fiber.

Bangkok Chicken Sandwich

6 ounces frozen pineapple juice concentrate,
thawed, undiluted
6 tablespoons East Meets West Spicy Ginger Teriyaki
Sauce
4 cloves garlic, minced finely
1 tablespoon plus 1 teaspoon Penzey's Bangkok Blend
1/2 cup mayonnaise
6 boneless skinless chicken breast halves
6 San Franscisco style wheat rolls
toppings, such as caramelized onion,
lettuce and tomato
Combine pineapple concentrate, Spicy Ginger Teriyaki Sauce, garlic and
Bangkok Blend in a zip-top bag.
Measure mayo into a small bowl and add 2-3 tbl. of the marinade mixture
and 1 tsp. Bangkok Blend. Mix well and chill.
Pierce chicken with the tip of a sharp knife in several times all over.
Place in bag with marinade and make sure the chicken is coated well.
Marinate in the refrigerator at least 4 hours.
Grill chicken, and when it is almost done, toas rolls lightly. Spread the
mayo mixture on the rolls, cut the chicken in half lengthwise and fit on
the roll.
Top with favorite toppings and serve.

How about something simple like Smoked Ham and Brie on a Croissant with tomato, lettuce and honey mustard? One of our favorite combinations...
Another is grilled chicken, blue cheese and bacon on a croissant. I haven't had that one in ages .... yum!

How about a hot roast beef sandwich on a toasted hero bread and make blue cheese onions as a topping. We used to make that here before we all started our new and improved healthy way of eating due to diabetes.
Its easy to make this sandwich.. Make a hot roast beef sandwich on a hero roll how you normally would make it and then you sautee onions in a little olive oil until they carmellize. Then you add a top of the line chunky blue cheese dressing to it like Maries, or another good brand. Also we add some crumbled fresh blue cheese as well and it makes like a really good onion topping. I mean you can do it the harder way by adding blue cheese and heavy cream and reduce it sort of like you would make an alfredo sauce and then add the carmelized onions to that but the dressing method is just a good and easier. So then you add the blue cheese onions on top of the hot roast beef sandwiches and oh mann its good! Oh brother, we even took it a more fattening step farther and melted mozzarella on top! I have to say we havent had them in a loooong time! To fattening! Oh the blue cheese onions is even good on a steak off the grill. I wish I could eat like that again.

Just adding to Val's vote for the chicken, brie, and cherry tomato sandwich. It's excellent and works well for a crowd.

Well, what I really wanted to suggest was a sandwich I had at Biaggi's: Chicken Panini - Grilled chicken breast, herb-flavored
goat cheese, roasted red peppers, hickory smoked bacon and fresh tomato basil salsa. I don't know how low-fat that is, but you could add small amounts of the goat cheese and bacon or even skip the bacon and it would still be good. It's AWESOME.
These are very tasty....although I'm not crazy about yogurt, so I'd probably try subbing fat-free or reduced-fat sour cream next time.
Smoky Bacon and Blue Cheese Chicken Salad Pitas
(From Cooking Light, May 2004)
3/4 cup plain fat-free yogurt
1/4 cup (1 ounce) crumbled blue cheese
2 tablespoons light mayonnaise
1/2 teaspoon freshly ground black pepper
3 cups shredded romaine lettuce
1 1/2 cups shredded cooked chicken, about 6 ounces
4 slices bacon, cooked and crumbled
2 medium tomatoes, seeded and chopped
4 (6-inch) whole wheat pita breads, cut in half
1. Combine first 4 ingredients, stirring well. Combine lettuce, chicken, bacon, and tomatoes in a medium bowl, stirring well. Drizzle yogurt mixture over chicken mixture; toss gently to coat. Spoon 1/2 cup chicken salad into each pita half. Serve immediately. Yield: 4 servings (serving size: 2 stuffed pita halves).
2. Calories 375 (29% from fat); Fat 12.1g (sat 3.7g, mono 3.6g, poly 3.1g); Protein 26.1g; Carb 43.8g; Fiber 6.3g; Chol 55mg; Iron 3.5mg; Sodium 696mg; Calc 130mg.

Thanks for the suggestions so far!!
These really do need to be on the LOW-fat side so I need to avoid bacon, blue cheese, brie, etc.:( And, I should have mentioned that we don't eat beef.
I've been wanting to try muffulettas. I wonder if I could make a couple of different kinds of small sandwiches and include those. Although, it would sure be a lot easier to just put the stuff out and let everyone assemble theirs how they wanted to. That was part of what I liked about the Smoky Orange Chicken Sandwiches and the Barbecue Pulled Chicken with Marinated Cucumbers. I just prepared it all and put it out for people to make their own sandwich.
I'm keeping all the suggestions since
I want to try them :D but I'm just not sure what to do about the party.

Here's an easy recipe that your guests should enjoy. It's a favorite at my house and is great for picnics. This recipe is for 2 servings, so you'll need to adjust amounts accordingly.
Caesar Chicken-Salad Sandwiches
2 (4-ounce) skinned, boned chicken breast halves
1 tablespoon fresh lemon juice, divided
2 teaspoons low-sodium soy sauce
cooking spray
3 tablespoons light mayonnaise
2 tablespoons grated parmesan cheese
1 teaspoon Dijon mustard
1/2 teaspoon anchovy paste
1/2 teaspoon bottled minced garlic
1/8 teaspoon pepper
4 (1.2-ounce) slices whole-grain bread
2 romaine lettuce leaves
4 slices tomato (1/4-inch-thick)
1. Preheat broiler.
2. Combine chicken, 2 teaspoons lemon juice, and soy sauce in a large zip-top plastic bag; seal and marinate in refrigerator for 10 minutes, turning bag once. Remove chicken from bag. Place chicken on a broiler pan coated with cooking spray; broil 6 minutes on each side or until done. Cool; shred chicken with 2 forks.
3. Combine chicken, 1 teaspoon lemon juice, mayonnaise, and next 5 ingredients (mayonnaise through pepper). Spread 1 cup chicken mixture over each of 2 bread slices. Top each with 1 lettuce leaf, 2 tomato slices, and 1 bread slice. Store sandwiches in small zip-top bags in refrigerator.

Can it be vegetarian?
Cut a loaf of french bread in half and rub garlic on the inside.
Add:
Arugula (sp?)..we use spinich 'cause I can't usually find it
Thinly sliced purple onion
Thinly sliced cucumber
Bottled roasted red pepper
Vinegar, oil, salt, pepper to taste
We like to wrap it in foil and keep it in the fridge a few hours.

I recently made the BBQ Turkey Smokey Joes and they were delicious. I just put out the crock pot and let people make their own sandwiches.

An easy sandwich you can also make in advance would be a variety of wrap sandwiches. You can do a "club" w/ turkey, ham and turkey bacon, lettuce tomato. Put some lowfat ranch or an italian dressing on the wrap, put the meat, lettuce and tomato, then roll up, cut into sections, put a fancy toothpick thru them and voila. You could also make a couple of different varieties like tuna fish, ham and cheese, veggie etc. You can buy different types of wraps, look for sundried tomato, herb or spinach.

It could be vegetarian but dd is going to be 13 yo and would be VERY disappointed since she doesn't particularly care for onions, cucumbers, tomatoes, peppers, greens, etc.:( She's hoping for some kind of chicken like we've done in the past.
I think I've decided that I want to stay away from assemble-ahead-of-time sandwiches like wraps, etc. I don't mind having leftover individual parts but I don't want to be left with leftover already-made sandwiches.
We love the BBQ Smokey Joes but I don't know that they'd work for this situation.
Any other possibilities?

Well, you could always get a deli tray of lean meats,cheeses and breads and have everyone make their own. Then if you have leftovers you can store them accordingly.

Thanks, Susan. That's what we usually end up doing when our extended family gets together for lunch so I was hoping to do something a little "more". Dd would love it, though.
But, I'm still looking for a recipe along the lines of the other 2 I had made. Haven't found it yet, though.
