Oh, wow...can it be the end of the month already?! What were your hits and misses this month? Anything outstanding?
I will post my reviews later tonight when I get them organized. It was a strange month for me. Either I made something really good or something that was just plain horrible, there was no middle ground for me!

I've made this three times now, once for DS to take to school for a "taste of the world" party where it was a big hit with the rest of the 14 year old kids. DH LOVES it! Enough said.

And here's the squash fries...
Butternut Squash Fries
Serves 4
1 medium butternut squash
2 tsp olive oil
1/2 tsp ground cumin
coarse salt
ground pepper
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
1. Preheat oven to 425F. Peel and seed squash; cut into 1/2-inch-wide sticks. On a baking sheet, combine squash with olive oil and cumin; season with salt and pepper. Toss to coat, and spread squash in a single layer on baking sheet. Roast until fork-tender, about 45 minutes to 1 hour.
2. Sprinkle with lime juice and cilantro.

I didn’t get to make as many things as I intended this month because I injured my knee – torn ACL & meniscus. I’m going to change my screen name to “BleacherBuns” or something similar, as I’m no longer playing soccer, just watching :(. Enough of the pity-party, here’s my list:

Here's my list.
EXCELLENT
East Indian Tomato Soup with lentils and coconut. Helene, BB. This was the best lentil soup I have made. I gave it to 2 friends who were ill and they also loved it. I was surprised that the red lentils changed color when they were cooked. I used Tabasco because I had no sambal olek.
Baked French Toast with Pecans, March BA. Put together the night before, this was very to make and delicious. It is very sweet so although I served maple syrup with it, I didn’t need any.
Chocoloate Ricotta Muffin, Canice,BB. There were great and nice with the chocolate chips in them.
Maple Granola, J/F CL. Didn’t clump but otherwise it was excellent.
Figs with ricotta, honey and walnuts. CL recipefinder. Since I had dried figs, that is what I used, although I thing I would love this with fresh figs.
Fettucini with low fat alfreddo, New MrsG, BB. I used tortellini because I had it and the sauce is good so it worked perfectly.
Kamish cookies, MIL. My MIL always made them and they were a favorite, but this is the first time I treid the recipe, It is similar to making biscotti but the cookie is not as hard.
VERY GOOD
Ma Po Tofu, Eve, BB. This turned out great, much to my surprise. I left out the meat and bean sauce but loved the chili garlic sauce. A new favorite.
Butternut squash bean and tomato stew, Jack Bishop. Good and may make it again .
Beans and cheese tacos, New Mrs G, BB. The parmesan adds a lot of flavor to the mixture and anytime I have left over ricotta will make this again.
GOOD
Fried ricotta, newpaper. Supposed to replace an omelet…no way. The burnt part was great

I did't cook too much this month, DH and I are separated and cooking for one (sometimes 2 when DD is home) is not as much fun. When I did cook it was because DD#1, DD#2, and DS were home. So here goes my teensy list. I sure miss cooking! :( :( :( (and DH)

Hot Garlic Shrimp and Asparagus - CL J/F 03 - very tasty and will repeat. Asparagus was crispy and complimented the shrimp w/wine. Would have put this in the above category except that although very good, I didn't think it was as good as the Border-Style Shrimp I've made in the past.
Garden Pea Salad - Paula Deen - I enjoyed this because I like green peas and wanted something different. I lightened it by using low-fat mayo.

Sure! Here you go....
Labne, Sumac, Olives and Extra Virgin Olive Oil
To make Labne:
Place two or three paper towels in a strainer. Spoon in a carton of good quality, natural yogurt. Place strainer over a bowl to catch the liquid that runs out, and set the whole thing in a refrigerator for several hours. The original recipe said 24 hours minimum, but I let it drain more like 5-6 hours and found the consistency to be exactly what we like. The longer you drain the yogurt, the firmer the labne will be.
To make the finished dish:
Spread the labne on a large plate in circular motions about 1/2 cm thick, it should cover the plate entirely. There should be plenty of peaks and troughs to capture the olive oil. Sprinkle generously with...
1 tsp. sumac (Lebanese spice)
1 tsp. sea salt
1 tsp. fresh thyme leaves
12 pitted Kalamata olives (I chopped these up)
Good drizzle of Extra Virgin Olive Oil
Freshly ground black pepper.
Serve with hot crusty bread.

My notes: Adjust the salt to your taste. I served it with warm pita bread cut into small triangles. We have also eaten it with warm ciabatta, and that is delicious, too. We can buy sumac at The India Emporium here in KC. I would think any Middle Eastern grocery would carry it as well.

Here's ours - although I have to say that our real favorite of the month was quinoa, which I didn't include in the list because it's not really a recipe, but it was the first time we'd ever eaten quinoa before, and we both LOVED it!

Stuffed Peppers with Feta Cheese Sauce – Sundays at Moosewood Restaurant – Yummy and unique way to serve stuffed peppers – my favorite recipe from this book thus far
Cinnamon-Nut Brunch Loaf – Recipelink – very moist and flavorful, although not light
Seafood Fettuccine – CL, Jan/Feb 2002 – Phenomenal.
Chocolate and Coconut Cream Fondue – BA – Yum!
Traditional Crab Cakes ‘21’ Club –Served with chili-mayo from another Epicurious recipe – light mayo, chili-garlic sauce, and lemon juice. Perfect! Awesome, awesome recipe.
Spicy Lebanese Lamb-Stuffed Squash – this was delicious, healthy and easy! Used turkey instead of lamb, sultanas instead of currants, and mixed in diced canned tomato instead of the tomato sauce Yum!
Sweet Crunchy Mustard Chicken – CLBB-Kvalley – One of those recipes with just a few ingredients that you think will be okay, and good for an easy weeknight meal – it was deceptively delicious!
Herbed Turkey with Roasted Garlic Gravy – CL, 11/02 – This was really very good and quite easy.
Rosemary Mashed Potatoes and Yams with Garlic and Parmesan – Recipezaar – This was one of our hits of the month. Delicious and very rich tasting – lots of really wonderful flavor without it being too heavy.

Fudgy Mocha Toffee Muffins – CL, Jan/Feb 2005 – this was probably cook’s error as they came out very dry – in opposition to most other reviews – may repeat this one
Blueberry-Lemon Banana Bread with Cream-Cheese Glaze, CL
Multigrain Bread – CLBB – this is the bread that I forgot to add the yeast in, so really can’t judge! Will have to repeat.
Parmesan and Cracked Pepper Grissini – CL - these were good, just not so good that they were worth the extra time it took to shape them, etc. May make again, but would add salt and more cheese.
Mixed Greens with Berries and Honey-Glazed Hazelnuts – This was also good, but not great. I liked the flavor of the dressing, although it had the seeds from the raspberries, which I didn’t like. Subbed pecans for the hazelnuts, and added a lot more honey to make them nice and sweet.
Thai Sweet Potato Stew – Another “good, but probably won’t make again, due to other great recipes out there to try”. Added chicken broth to make it more of a stew, was very thick.
Spice-Crusted Tofu – EW, Spring 2004 – posted on CLBB – We did like this, it was definitely on the “Good” end of the scale, but we didn’t like it nearly as well as other tofu dishes, so for that reason I probably wouldn’t repeat it.

Thanks, KathyB, for the recipe. I like to buy the fresh (and sometimes still hot) pita breads at the Jerusalem Bakery in Westport; sounds like this would be wonderful with the Labne. They and the middle eastern grocery at the City Market both carry sumac, too.
Here you go, Lynne. The ingredient measurements and instructions are rather vague, as my friend doesn’t really measure anything when she makes this salsa. The salsa really does benefit from sitting a couples of hours (or overnight) before eating. Freshly made, the salsa tastes okay, but kind of “harsh”, but let it stand for at least 2 hours and the flavors really meld. The list of ingredients here don't seem that remarkable, but they come together to make a great salsa. Lula is "famous" for her salsa among her friends and family.
Lula’s Salsa
2 jalapeno peppers, or to taste
4 cloves garlic
olive or vegetable oil
2 cans stewed tomatoes, any brand (I used Muir Glen diced tomatoes)
small handful of fresh cilantro
salt to taste
Finely chop the peppers and garlic and quickly fry in a little oil. This does tend to pepper-gas your kitchen, but it gives a much better flavor (it will also clear your sinuses if you have a cold or allergies!). If you want less heat, remove the seeds from peppers when you chop them.
Place everything in a blender or food processor and blend until desired consistency. If you want you can also throw in some green chilies, onions (I added ½ onion, chopped, when I fried the pepper-garlic mix), etc. Make it your own!
Let salsa stand, refrigerated, for at least two hours.
Makes about 1 quart.
BTW, I like the name of your dessert “Revised Parent of Better Than Sex Cake”!

Thanks, I'm still sleeping this morning. I have to try this recipe. I always make labne but mix it with mint, garlic, salt and lemon juice. So I want to try this new version.

Actually, the middle eastern restaurant next to that grocery in the City Market is where we first tried Labne dip (part of their appetizer platter) and started me on a search to find a recipe!

Stuffed Peppers with Feta Cheese Sauce

1 cup chopped onion
3 cloves garlic -- minced
2 teaspoons dried dill
1/4 cup olive oil
1/4 cup pine nuts
3 tomatoes -- chopped
3 cups cooked brown rice
1/4 cup chopped parsley
1 1/2 tablespoons fresh mint
pepper
4 large bell peppers
1/2 cup tomato juice
1 3/4 cups milk
1/4 cup butter
1/4 cup flour
1/2 teaspoon dried dill
1 tablespoon chopped mint
3/4 cup feta cheese
salt and pepper
Saute onions, garlic, and dill in olive oil until onions are translucent. Add pine nuts, when they begin to color, add tomatoes. Cover and simmer 3 minutes. Add rice, mix well. Stir in parsley and mint. Season to taste and take pan off heat.
Halve peppers lengthwise, removing seeds. Stuff with rice and place in an oiled baking dish. Pour tomato juice into bottom of dish. Tightly cover and bake at 375 for 30 minutes.
Heat milk in a small saucepan, stirring occasionally to prevent scorching. In another saucepan, heat butter to melt. Stir in flour, cook and stir a few minutes. Pour in milk, whisking constantly until thickened. Add dill, mint, and feta. Heat until melted and smooth, season to taste.
Serve peppers topped with sauce.

NOTES : This was excellent! My changes were to use 5 cloves of garlic instead of 3, and canned diced tomatoes instead of fresh. And I used V8 instead of tomato juice - which I just poured into the pan before placing the peppers inside. Would also be good with some capers. Absolutely delicious!

Here you go, Loren! My changes were to add some coconut extract since all I had was light coconut milk, and to scale it down to 2 servings. EF stands for Everyday Food. :)

Coconut Bread Pudding
Serves 8
butter, for baking dishes
1 loaf white country bread (1 lb), cut into 1-inch cubes (about 12 cups)
4 large eggs
3/4 cup granulated sugar
1 can (13.5 oz) coconut milk
2 cups whole milk
1/2 tsp ground cinnamon
1 tsp vanilla
1/4 tsp salt
confectioner's sugar, for dusting
1. Preheat oven to 350F, with rack in center. Butter eight 6-oz ramekins or custard cups; set aside. Arrange bread in a single layer on two rimmed baking sheets; bake until crisp, tossing once, 15-20 minutes. Remove from oven. Reduce oven heat to 300F.
2. Meanwhile, in a large bowl, whisk together eggs, granulated sugar, milks, cinnamon, vanilla, and salt. Stir in toasted bread; let sit, tossing occasionally, until bread has absorbed liquid, about 5 minutes.
3. Divide bread mixture evenly among ramekins. Place on a baking sheet; bake until a toothpick inserted in center of a pudding comes out clean, 50-60 minutes. Let cool. Serve dusted with confectioner's sugar.

EXCELLENT
Quincy Jones Ribs – CLBB. Definitely falls-off-the-bone; would up spices next time
Dulce de Leche Brownies – CLBB. Fudgy, dense and oh so good
Grilled Chicken Salad with Chaat Masala – excellent, very flavorful
Cheat’s Dessert – an OMG dessert for us; so simple, yet good enough for entertaining, “the sum is greater than its parts”
Peanut Butter Chicken Stir Fry – excellent, quick and pretty healthy. What more could you want?
Chocolate Marquise – so decadent, divine and rich. Perfect ending to an elegant meal.
Shrimp Diablo – CLBB. Excellent, easy to make, pretty enough for company presentation.
Saucy Center Mocha Cakes – excellent, simple to make, warm, gooey deliciousness
Thai Chicken Pizza – so delicious and flavorful
VERY GOOD
Oven Baked Beef Stew – CLBB, upped the broth (and spices accordingly), simple and made the house smell amazing
Roast Chicken with Sour Cream and Mango Chutney – CLBB, easy and yummy. Had lots of extra sauce, so mixed it in with Basmati rice and served chicken over it
Buffalo Shrimp – I renamed them Triple Coated Shrimp. Would make again, very flavorful and pretty easy. Served with a Bleu Cheese Dipping Sauce.
Seafood Salad – very flavorful, came together in a snap
Angel Bars – CLBB. It didn’t look like they were going to come together, but they did. Only change I made was to reduce the coconut (making for someone who doesn’t like cococnut) and add a handful of cranberries. Would definitely make again. Cuts very neatly.
Chickpea, Garlic and Mint Topping – served spread over crostini. Very simple to make, healthy and yummy.
Yellow Mustard Potato Salad – everyone loved it, even non-potato salad eaters. Tasty, colorful and quick to make (30 minutes to table)
Spaghetti and Tomato Dill Salad – CLBB, very refreshing, easy to make, and healthy to boot!
Fire Crackers – CLBB. Subbed onion soup mix for the ranch instead. Very tasty and addicting.
White Balsamic Provencal Salad – very tasty and flavorful; everybody did everything but lick their plates
GOOD
Frosted Banana Bars – not what I thought, too moist
Sweet Crunchy Mustard Chicken – CLBB, tasty and a snap to make
Lightning Cake – like a coffee cake. Would double the topping and make again.
Lemon Buttermilk Bread Pudding with Blackberry Sauce – good, but not as puddingy as I like. Only sub I made was blueberries for the blackberries. Wouldn’t make again – have a better recipe.
Indian Rice Pudding – CL
OK
Cheddar Pennies – just didn’t do it for me, nothing special
Cheese and Beer Bread – CLBB; ok, but strange consistency
Cocoa Fudge Cookies – CL; ok, just not a wow for us
Honey Mustard Pretzel Trio – CLBB; smelled delicious while I was making them (reminded me of Hot Sams!), and even while they were baking, but not much added flavor when they came out
Fiery Carrot Dip – not bad, just not my thing. Oddly enough, although it has 2 lbs of carrots in it, you can barely taste the carrots.

Potato Clam Stew - just plain yuck. A waste of good clams.
Salt-Roasted Yukon Gold Potatoes with Bay Leaves – absolutely no flavor and very labor intensive
Bee Stings – biggest reason they’re rated this way was the truffle oil. I found out I can’t stand it (never had it before)
Chocolate Chip Oatmeal Muffins – CLBB. I liked it warm right from the oven with butter, but the next day, not so much. They were also panned at work … not sweet enough.

Tortilla Soup (Stop and Smell the Rosemary; RebeccaT)
Tex-Mex Cheddar Turkey Burgers with Carmelized Onions - I always make these into tacos instead of burgers.
Very good:
Chicken with Sun-Dried Tomato Sauce (CL Jan/Feb 2005) - I baked this in the oven instead of pan frying the chicken. This eliminated the need to use the oil from the jar to cook the chicken in. I also added kalamata olives
The Chewey (AB) This is the best chocolate chip cookie that I have ever made. I think these have a great texture, and a perfect blend of cookie dough to chocolate...nothing that stood out, just an all around great flavor. I felt the Neilson-Massey cookie was too buttery, my old standby had too much of a vanilla flavor, others were either too cakey, too crunchy, too chewey, not enough chocolate chipes to dough...something!! There wasn't one thing that I would change about these. However, the next day I felt that the texture changed a little so they weren't AS good. Hmmm....
Sweet Crunchy Mustard Chicken (KValley on BB and Food and Wine, 1/03) - I thought this turned out very well. Instead of dry bread crumbs I used honey wheat pretzels that I ground up in my food processor. I only added 1 tsp of brown sugar instead of 2 and this was perfect. The chicken came out very moist, and had a good flavor. Perfect for a weeknight meal. This froze very well. I served it with green beans.
Not For Me
Lentil and Potato Stew (bobmark and Good Food Gourmet) - my friends seemed to like this, but I just don't think I enjoy Indian food that much. This received rave reviews on the BB, though.
Buttermilk Waffles - CI American Classics - these were horrible, and I will not be making them again. I should have thought about the recipe a little more before making it. It doesn't call for any sugar. They were terribly bland, and their idea of a really thick batter making great waffles...did not work for me. I shouldn't have been trying a new recipe when I have guests over (bf, and friend). Thank goodness for the BaskinRobbins/Dunkin Donuts right around the corner because there was NOTHING that was going to save those waffles. LOL!
White Chili Chicken Junior League Celebration Cookbook. This was a nice reminder about trying new recipes when you already have one that you love. There was something about the combination of flavors in this that I did not like at all. I ended up throwing the leftovers out and barely ate a bowl of it. I will stick to my original recipe from now on!!
I only cook for myself so that is all to report for this month!

Balsamic Vinegar (CLBB) next time a little less honey, i served it over a simple baby spinach salad with tomatoes and red onion.
Chicken Drumsticks with Muhammara Sauce (Gourmet/BA)- DELICIOUS!!
Chipotle Tacos (Gourmet/BA)-best darn tacos I ever had
Wild Mushroom Lasagna (gourmet)- added sweet italian sausage, my own light bechemel sauce and my own homemade tomato sauce
Savory Fennel Bread Pudding (CL)- used 1 1/2 cans broth, touch more garlic and added cheese on top. Taste of comfort food, but healthier. This would be fantastic paired with Thanksgiving turkey
Eva's Ma Po Tofu (CLBB) with broccoli and matchstick carrots, doubled the sauce, sauteed the tofu first by itself because I like mine nice and crispy, and used ground pork instead of beef.
Turkey Jasmine Rice Meatballs with Baby Bok Choy (CL)- Yum, added more garlic, sauce didn't thicken but didn't matter.
Spicy Teriyaki Mushrooms (CLBB)- these were so good. DH raved about them.
Briased Pork Shoulder in Hoisin-Wine Sauce with Dried Plums (CL)- this was so good. Served directly over mashed potatoes. Recipe said to strain broth and discard solids, I didn't strain, just kept the onion solids right in. Also marinated in fridge 2 days, cooked, then sat in fridge overnight. Skimmed off fat sooo easily. Added plums with shredded pork and broth all together, plums made the flavor boom.
Good:
Linguine with White Clam and Broccoli Sauce (CL 12/04)- good flavor, I used 2 cans of clams (not fresh:eek: :p ) and used the juice they were in plus a bottle of clam juice to equal 1 c. "reserved". Added extra garlic.
Muesli (CL 1/03)- next time will leave out the figs, gives it a funny taste and crunch. Loved the dates and coconut in it. Added xtra brown sugar. I like the taste better with milk than yogurt (sitting overnight). May taste even better with whole fat yogurt though;) .
Okay probably won't repeat:
Chicken stuffed with goat cheese and basil (CLBB)- we liked the recipe from CL that is stuffed with sundried tomatoes and goat cheese better.
Northwoods Bean Soup (CLBB)- just okay..kind of bland
Lemon Raspberry Gelatin (BA)- I liked this but DH thought it was too tart. I served it with whipped cream. Yum, although it is a lot of work for such an "okay" recipe.

Ricotta Honeycakes, Nigella (CLBB)- wierd texture, flavor. They just lacked something....haven't decided if I would make them again. Guess I am just used to the fluffy buttermilk pancakes.
Maple-Almond Granola (CL)- just okay, didn't thrill me. I have a few other granola recipes I favor much higher than this one.

Braised Chicken with Celery Root and Garlic (BA/Gourmet)- so flavorless. I served it over egg noodles and tried in vain to give it some flavor.......we ate it..but did not enjoy it.

Saucy Center Mocha Cakes
Chickpea, Garlic and Mint Topping
SAUCY-CENTER MOCHA CAKES
Bake these rich chocolate cakes just before serving. Watch timing carefully so the edges are set, yet the centers are sauce-like.
Preparation 15 min.
Baking 9 min.
Cake Ingredients:
6 tablespoons Butter
1 cup real semi-sweet chocolate chips
2 teaspoons instant coffee granules
3 eggs
1/2 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon vanilla
Topping Ingredients:
Powdered sugar
Whipped cream or ice cream, if desired
Heat oven to 400°F. Grease and lightly flour six (5 or 6-ounce) glass custard cups. Place onto ungreased baking sheet. Set aside.
Melt butter, chocolate chips and coffee granules in 1-quart saucepan over medium heat, stirring occasionally, until smooth (2 to 3 minutes). Set aside.
Beat eggs in small bowl at high speed until slightly thickened and lemon-colored. Continue beating, gradually adding sugar, until light and fluffy. Add melted chocolate, flour and vanilla. Reduce speed to low; beat just until mixed.
Pour batter evenly among prepared cups. Bake for 9 to 13 minutes or until top is puffy and crackled in appearance, but center is still soft. Cool 5 minutes; loosen cakes with knife.
Invert cakes onto individual serving plates. Sprinkle with powdered sugar. Serve warm with whipped cream or ice cream, if desired.
NOTES: Batter can be prepared several hours ahead. Bake just before serving. Cover and refrigerate if more than 1 hour. Allow to stand at room temperature at least 15 minutes to warm slightly before baking.
To easily sift powdered sugar, place sugar in small strainer. Gently tap strainer to allow the sugar to fall through openings onto cakes.
Yield: 6 servings

"Fiery Carrot Dip"
(8 servings)
2 lb carrots, cut into 3 inch length
1/4 c. olive oil
1/4 c. red wine vinegar
3 garlic cloves, minced
1 T honey
1 1/4 t harissa or other chile paste
1 1/2 t ground cumin
1/2 t ground ginger
salt
Topping:
1/4 lb feta (about 1 c)
3 pitted black olives
Bring a large saucepan of salted water to a boil. Add the carrots and cook over moderately high heat until tender, about 20 mins. Drain.
Transfer carrots to a food processor. Add remaining ingredients and process until smooth. Season w/ salt.
Scrape dip into bowl - scatter w/ toppings.
Serve w/ crackers or Finn Crisp, or crackers of your choice (wheat thins and pita are good)
**Note -- I believe this recipe is from either Gourmet, BA, or F&W magazine. I never use the olives, and I use balsamic vinegar in place of the red wine vinegar.
Tunisian Potato Turnovers
--Moosewood Low-Fat Favorites
2 cups peeled and cubed potatoes (I used Yukon Gold)
2 cups peeled and cubed sweet potatoes (I made all the potatoes really small cubes to make
mashing easier)
4 garlic cloves, minced or pressed
3 Tbsp. plain nonfat yogurt
2 Tbsp. minced scallions (I used leeks)
1 tsp. ground caraway (I used the whole seeds)
1 tsp. ground coriander
½ tsp. ground cumin
1/8 to ¼ tsp. cayenne
1-2 Tbsp. fresh lemon juice
½ tsp. salt, or more to taste
12 sheets phyllo or pastry dough, each about 12 x 17 inches
3 Tbsp. olive oil (I used my mister and a brush)
whole caraway seeds (optional)
Preheat oven to 400 degrees.
Cook the potatoes, sweet potatoes, and garlic in water to cover until tender, 15-20 minutes. Drain the potatoes and throughouly mash by hand with the yogurt, scallions(leeks), caraway, coriander, cumin, cayenne, lemon juice, and salt until very smooth (mine still had some lumps). Add more salt, if necessary, to taste.
Prepare a baking sheet with a light coating of oil or cooking spray (I used a nonstick and misted lightly with olive oil). Set it aside near your work area.
Place the filling, phyllo, oil, a pastry brush, and a clean damp towel on the counter within easy reach. Unfold the stack of phyllo and in one smooth motion, remove a sheet and place it flat on the counter top with one of the short sides nearest you.
Brush it lightly with oil. Working quickly, add a second and then a third sheet, oiling each lightly. Cover the remaining stack of phyllo with a damp towel as you work to prevent it from drying out and becoming brittle.
Cut lengthwise through the three oild sheets to make four strips. Place two rounded tablespoons of filling on each strip (I used slightly less), one near the bottom and one about a third of the way up. With a spatula or back of a spoon, or a knife, spread the filliing to thinly cover the bottom half of the phyllo dough strip. Fold the lower left corner up and over diagonally so that the bottom edge is aligned with the right side. Fold straight up and then to the left. Continue to fold as you would a flag to make a small triangular pastry. Place each triangle on the baking sheet.
Repeat three more times until all of the phyllo and filling has been used and you have 16 turnovers. Brush the tops of the turnovers with any remaining oil and sprinkle them with whole caraway seeds, if desired. (At this point the turnovers can be tightly covered and refrigerated for several hours before baking.)
Bake for 15-20 minutes until puffed and golden. Serve immediately.
Per 3.5 oz. serving (1 turnover):
97 cals., 1.7g protein, 2.9 g fat, 0.4 g saturated fat, 0.3 g polyunsaturated fat, 2.0 g monounsaturated fat, 0 mg cholesterol, 118 mg sodium, 15.9 g carbs, 1.3 g total dietary fiber.

No problem. The longer I procrastinate, the more likely I am to forget. :D The mocha cakes are SO simple to make... I made them after we had dinner (had company over) and they were done and being enjoyed very quickly. Our two-year-old just finished up the last one last night. ;)

2 packages frozen chopped spinach (10 oz each) -- thawed and drained

seasoned salt -- to taste
1 cup grated sharp cheddar cheese
Cut stems from mushrooms. Saute stem pieces and caps in oil until browned and set aside.
Place spinach in bottom and sides of shallow 10 inch baking dish. Sprinkle onion, melted butter, salt, garlic salt and seasoned salt on spinach.
Sprinkle 1/2 cup cheddar cheese on spinach. Place mushrooms on cheese. Season with garlic salt and sprinkle with remaining 1/2 cup cheese.
Bake uncovered at 350 degrees for 20 minutes.

2 sticks unsalted butter
2 1/4 cups bread flour
1 teaspoon kosher salt
1 teaspoon baking soda
1/4 cup sugar
1 1/4 cups brown sugar
1 egg
1 egg yolk
2 tablespoons milk
1 1/2 teaspoons vanilla extract
2 cups semisweet chocolate chips
Heat oven to 375 degrees F.
Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.
Pour the melted butter in the mixer’s work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.
Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.

Yes, this is the Cincinnati Junior League cookbook. I got it as a Christmas gift 2 years ago. I haven't cooked a whole lot from it but have really liked everything that I have tried. It is not your typical collection of contributed recipes with lots of the same old standbys but there are some unique recipes in there from both individuals as well as local Cincinnati restauarants. In addition, they highlight some recipes which have appeared in previous cookbooks and been very popular. There is a Thai Chicken Salad in here that I love. I would recommend this cookbook and I am trying to remember to pull it out when I am loking for something new. Hope that helps! :)

I want to give credit where it’s due – I adapted this recipe from valchemist’s Louisiana Banana Cake with Pecan Praline Topping (which is great, too). I had some leftover cream of coconut from making a friend’s birthday cake, so I added it to a basic cream cheese frosting. I used Coco Lopez brand, which you find in the drink mixers sections of the grocery store (don’t use plain coconut milk – it’s not the same stuff). The flaked coconut in the cake is optional (I’ve made the cake twice now and my family prefers the cake without the coconut – it’s a texture thing). The coconut flavor is subtle but it goes well with the banana flavor.
[B]Banana Cake with Coconut Frosting[\B]
Recipe from: KCSoccer - Adapted from valchemist CLBB
3/4 c dark brown sugar
1/3 c butter -- softened
3 bananas -- ripe
1/4 c buttermilk
2 Tbsp rum
1 egg
1 1/4 c flour
1 tsp baking powder
1/2 tsp baking soda
1/3 c sweetened, shredded coconut -- optional
Coconut Frosting:
8 oz cream cheese -- softened
1/2 c cream of coconut (Coco Lopez brand)
1/2 tsp vanilla
enough powdered sugar to make a firm frosting (about 2 cups)
Preheat oven to 350º. Grease and flour a 9 inch square pan.
Cream sugar, butter, and bananas until smooth and creamy. beat in buttermilk, rum, and egg. Blend in all remaining cake ingredients.
Pour into pan. Bake 25 to 30 minutes, or until toothpick comes out clean. cool completely, then spread with frosting.
for topping: Beat cream cheese until light and fluffy; add coconut cream and vanilla; beat until smooth. Add enough powdered sugar to make a spreadable frosting (not too runny).

There are at least two recipes in the thread; note that this is the one called "Chocolate Cherry Cordial Muffins," posted, as I now see, by Chocolate Rose.
My subs: I used 1-1/2 cups white flour and 1/2 cup whole wheat; I used maraschino cherries, using a bit more than 1/2 cup; I reduced the milk just slightly because the cherries were juicy; and I used 1/3 cup Better 'n' Eggs instead of a whole egg.
(Oh, and I certainly used less than 1/2 tsp salt; probably 2 or 3 pinches; I never add all the salt called for, and often don't use it at all.)

Absolutely! I'll post either tomorrow or over the weekend. There are different variations of the Knishes, though. Do you recall anything else (except for the lungs and hearts) about your aunt's? No lung and heart variations in this one - it's a vegetarian book but there are three different pastry doughs and I think at least three different fillings. Based on the type my DH was used to, I made the potato pastry dough with a potato and cheese filling.

Old-Fashioned Apple-Nut Crisp
The combination of apples and nuts is a classic. We've cut back on the butter and oil in the topping to lighten this sweet treat and let the hazelnuts shine through. Top the crisp with a scoop of vanilla frozen yogurt for an extra indulgence.
5 medium-large crisp, tart apples, such as McIntosh, Empire, Granny Smith or Cortland, peeled and thinly sliced (about 5 cups)
3 T plus 1/2 cup packed light brown sugar
1 T fresh lemon juice
1 t ground cinnamon, divided
2/3 whole-wheat flour
1/2 cup old-fashioned rolled oats (not instant)
2 T butter, cut into small pieces
2 T canola oil
2 T frozen apple juice concentrate, thawed
1/3 cup coarsely chopped hazelnuts or walnuts
1. Preheat oven to 375 F. Coat an 8-inch square (or 2-quart) deep baking dish with nonstick cooking spray.
2. Combine apples with 3 T brown sugar, lemon juice, and 1/2 t cinnamon in a large bowl. Toss to mix. Transfer to the prepared baking dish, cover with foil and bake for 30 minutes.
3. Meanwhile, combine whole-wheat flour, oats, the remaining 1/2 cup brown sugar and remaining 1/2 t cinnamon in a medium bowl. Mix to blend. Using your fingers (or a fork or passtry blender), cut in butter until evenly distributed and there are no chunks. Stir in oil apple juice concentrate and nuts; toss well until evenly moistened and clumpy.
4. Remove foil from the baking dish and sccatter the topping evenly over the apples. Bake uncovered until the topping has browned and the fruit is soft and bubbling, about 30 minutes more. Let cool for at least 15 minutes before serving.
Makes 8 servings
Per serving: 273 calories, 10 g fat (3 g sat, 4 g mono); 8 mg cholesterol; 45 g carbohydrate; 3 g protein; 6 g fiber; 23 mg sodium

Sami: My grandmother used to make meat knishes. She stuffed them with chopped beef liver (I don't know if she moistened it first or not. If she did moisten it, she would have used Miracle Whip (shh its a family secret ;) )

2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, chopped
2 celery stalks, chopped

1 pound Swiss chard, stems trimmed, leaves coarsely chopped
1 russet potato, peeled, cubed

2 (14-ounce) cans low-sodium beef broth
1 ounce piece Parmesan cheese rind
2 tablespoons chopped fresh Italian parsley leaves
Salt and pepper
Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, celery, pancetta, and garlic. Saute until the onion is translucent, about 10 minutes. Add the Swiss chard and potato; saute for 2 minutes. Add the tomatoes and rosemary sprig. Simmer until the chard is wilted and the tomatoes break down, about 10 minutes.
Meanwhile, blend 3/4 cup of the beans with 1/4 cup of the broth in a processor until almost smooth. Add the pureed bean mixture, remaining broth, and Parmesan cheese rind to the vegetable mixture. Simmer until the potato pieces are tender, stirring occasionally, about 15 minutes. Stir in the whole beans and parsley. Simmer until the beans are heated through and the soup is thick, about 2 minutes. Season with salt and pepper, to taste. Discard Parmesan rind and rosemary sprig (the leaves will have fallen off of the stem.)
Ladle the soup into bowls and serve.

Here you go, Helene! It is so good! I took it to a Greek-themed dinner and everyone asked for the recipe. I made a lemon glaze with icing sugar and lemon juice (approx 1c sugar to the juice of 1 lemon) and poured it over the cake and then I served it with raspberries in light syrup. I also used canola oil, not olive oil.
My Big Fat Greek Wedding “Boondt” Cake
(Lemon Yogurt Bundt®)
This cake is a gem, inspired by the hit movie My Big Fat Greek Wedding. There is a scene in the film, in which a bundt cake upstages the ensemble cast. My version of this cake was inspired when I saw about two dozen huge, moist, yellow cakes at a high bake sale. I had rarely seen such tall, glorious cakes. I discovered they were made by a Greek grandmother whose grandson generously shared the ingredients with me (although not the proportions). Since then, I have seen a similar cake at a Starbucks and again was informed, the talented baker of the yellow bundt cake was indeed Greek.
At any rate, yogurt and lemons combine nicely to give this statuesque cake a tender pound cake crumb with a distinctly cheesecake taste.
I dust this with confectioners’ sugar but you can opt for a lemon glaze with chopped pistachios on top (if your mother-in-law, Greek or otherwise, is coming to visit)
1 cup light olive or vegetable oil
1/2 cup unsalted butter, melted
2 cups sugar
4 eggs
2 cups plain yogurt
2 teaspoons lemon zest, finely minced
2 teaspoons pure vanilla extract
2 tablespoons fresh lemon juice
1/2 teaspoon baking soda
4 teaspoons baking powder
1/2 teaspoon salt
4 cups all purpose flour
Confectioners’ Sugar for Dusting
Preheat oven to 350 F. Generously spray a 9 or 10 inch tube pan or angel food pan (not with a removable bottom) with non-stick cooking spray. Line a baking sheet with parchment paper and set aside.
In a mixer bowl, with the paddle attachment, on slow speed, cream the oil, butter, and sugar together until well blended, about 3-5 minutes. Add in the eggs, yogurt, lemon zest, lemon juice, and vanilla and blend well, about 2 minutes. Fold in baking soda, baking powder, salt and flour and blend well, making sure no un-combined ingredients cling to bottom well of mixing bowl.
Spoon into prepared pan. Set pan on baking sheet.
Bake until cake is set and tests done with a cake skewer comes out clean, about 60-80 minutes. Cake will have fine cracks on the surface. If cake is browning on top but seems undone inside, reduce temperature to 325 F and let bake until done at the lower temperature.
Cool in pan 15 minutes before unmolding onto a wire cake rack to cool completely.
Dust with confectioners’ sugar to serve. You can also offer this with fraises de bois or raspberries on the side or lemon sorbet.

I found this recipe on the BB posted by Kayla. I think they are the same ones that Tholbrook made.
Dinner Buns with Coconut Milk
Yield: About 18 Buns
Ingredients
1 teaspoon (5 ml) sugar
1/2 cup (125 ml) warm water
1 package active dry yeast
1/2 cup (125 ml) canned coconut milk
mixed with 1/2 cup (125 ml) regular milk
1/4 cup (50 ml) butter, margarine or shortening
3 tablespoons (45 ml) sugar
2 teaspoons (10 ml) salt
1/2 cup (125 ml) warm water
5 - 6 cups blended bread flour
Directions
Dissolve 1 teaspoon of sugar in 1/2 cup of warm water. Sprinkle in the package of yeast. Let it stand for 10 minutes and then stir.
Heat the milk to lukewarm, stirring. Add in the butter, 3 tablespoons sugar, 2 teaspoons salt, and 1/2 cup warm water.
Add the heated milk mixture and 2 cups flour to the dissolved yeast mixture. Beat until the mixture is smooth and elastic.
Gradually stir in the remaining 3 cups of flour, adding a bit more flour if necessary. The dough should be soft and easily leave the sides of the bowl.
Turn the dough out onto a floured surface and round it up into a ball.
Knead the dough until it is smooth, elastic and not sticky. Again, add a bit more flour if necessary.
Place the dough in a lightly greased bowl. Turn the dough so that the top is greased as well. Cover with greased wax paper and a tea towel.
Let the dough rise in a warm place until it has doubled (about 1 1/2 hours).
Preheat oven to 375 degrees Fahrenheit.
Punch down to let the air out of the dough. Turn it out onto a lightly floured board. Use a wetted knife to cut the dough in half, and then each half into thirds, and thirds again. This gives 18 buns.
Shape the buns into balls and place on a lightly greased surface. Bake for 18 - 20 minutes.
After removing the buns, use a pastry brush to lightly coat them with butter. Cool.

Here you go:
Greek Potatoes, Oven-Roasted
8 large potatoes -- peeled, cut into wedges
3 cloves garlic -- minced
1/2 cup olive oil
1 cup water
1 tablespoon oregano
1 lemon -- juice of
sea salt
pepper
Preheat oven to 440F.
Put all the ingredients into a baking pan large enough to hold them.
Season generously with sea salt and black pepper.
Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
Bake for 40 min.
When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
This will take about another 40 min.
Do not be afraid of overcooking the potatoes - they will be delicious.
