I have a ton of leftover ganache from a cake I made for Rob's birthday.
How long will it keep in the fridge?
Can you freeze it? I am thinking yes, but the chocolate was expensive, and I'd hate to curdle my nice ganache.
I need ice cream ASAP to use all this ganache on. :D

It does freeze great. ganache makes great truffles too. Form in balls fast freeze and then store in plastic bag. I have also keep a container of ganache in the frig for some time....about 3 months and its still good.

My "Art of Chocolate" book says if packed in an air-tight container truffles (ganache filling)will keep indefinitely in the freezer (leave in container to defrost to avoid condensation), 1 month if refrigerated. I think leaving it in the ganache form is best for the freezer. Can you make a wack of truffles for an upcoming event/random gift giving?:)
