I've got some frozen catfish fillets I'd like to cook up tomorrow night. Any suggestions? Do they broil well?

I love catfish fillets. Yes, they broil well. I like to do this dish that is blackened with a lemon butter sauce, it's not light at all. Can post if you're interested. You can use catfish in just about any recipe calling for snapper, redfish, halibut or firm white fish; it's pretty versitile.

Lime-orange Catfish

1/4 cup fresh lime juice
1/3 cup orange juice
2 teaspoons sugar
1 garlic clove -- pressed
1/4 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/4 teaspoon pepper
2 tablespoons olive oil
6 catfish fillets -- (4-ounce)
Vegetable cooking spray
Garnishes: lime and orange slices and
fresh parsley sprigs
WHISK together first 8 ingredients; gradually whisk in olive oil until well blended. Remove half of juice mixture, and set aside.
PLACE catfish in a shallow dish or heavy-duty zip-top plastic bag; pour remaining marinade over catfish. Cover or seal bag, and chill 15 minutes, turning catfish once.
REMOVE catfish from marinade, discarding marinade.
COAT grill rack with cooking spray; place on grill over medium-high heat (350° to 400°). Place catfish on rack, and grill 5 minutes on each side or until done. Remove to a serving platter; drizzle with reserved marinade. Garnish, if desired. Prep: 15 min., Chill: 15 min., Grill: 10 min.
Per serving: Calories 183 (54% from fat)*; Fat 11g (sat 2.3g, mono 5.8g, poly 2g); Protein 18g; Carb 2g; Fiber 0g; Chol 53mg; Iron 0.7mg; Sodium 109mg; Calc 13mg.
Note: To broil catfish, follow recipe up to removing fish from marinade. Place fish on a rack coated with cooking spray; place rack in a broiler pan. Broil, 3 inches from heat, 7 to 8 minutes or until golden brown. Remove to a serving platter; drizzle with reserved marinade. Garnish, if desired.
*Most of the fat calories come from omega-3 fatty acids (in catfish) and monounsaturated fat (in olive oil), both of which are associated with lowering LDL (bad) cholesterol and increasing HDL (good) cholesterol.

There is a wonderful C/L oven fried catfish recipe with a spicy sauce. Very easy and very good.
The trick to getting good results from oven frying is to let the coated stuff sit for about 15 minutes to 1/2 hour on a rack to dry slightly - then spray with oil (I use TJ olive oil) very lightly which helps to crisp and bake on top of the rack suspended over the pan so that both sides crisp.

Thanks for all your suggestions. I actually have all the ingredients for the Lime Orange recipe without going to the store, so I'll give that one a try. And perhaps I'll try the oven fried recipe from CL for Friday.

I love using catfish for Fish Tacos. CL recipe is good.

I think I know this recipe... And I'd highly recommend it :)

Our family's current favorite is to dip the filets in a wash of egg and milk. Then make a mixture of panko breadcrumbs, Tony's seasoning, and parmasan cheese and coat filets. Place on a sprayed baking sheet and chill for 30 minutes. Spray filets with olive oil spray and bake for 30 minutes at 400 degrees.
My husband said he would eat this at least once a week!

Potato-Crusted Catfish with Warm Pinto Bean-and Bacon Salsa

1/2 cup milk
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
4 (6 ounce) catfish fillets
1 cup instant potato flakes
1 tablespoon vegetable oil
1 tablespoon butter
Warm Pinto Bean-and Bacon Salsa:
1 (16 ounce) can pinto beans, rinsed and drained
1 (10 ounce) can Rotel diced tomatoes and green chiles
4 slices ready to serve bacon, cut crosswise into
thin slices
1/4 cup minced fresh cilantro
.Stir together milk and lemon juice in a shallow bowl; let stand 5
minutes. Stir in salt and garlic powder. Dip catfish in milk mixture;
dredge in potato flakes.
Heat oil and butter in a large nonstick skillet over medium-high heat
until butter melts. Add catfish to skillet; cook 3 to 4 minutes on each
side or until golden. Arrange catfish in individual serving plates and
top with salsa. Garnish, if desired.
For salsa: Stir together beans and tomatoes with chiles in a small
saucepan over medium-low heat, and cook, stirring occasionally, until
thoroughly heated. Stir in bacon and cilantro
