Does any one have any recipes that use soy flour or know the ratio that I can substitute soy flour for wheat flour??

I have been using soy flour in my bread recipes, pizza doughs and some cookie recipes for a couple of years now. I've found that a 3:1 ratio of wheat:soy works well.

Be aware that soy flour may cause your dough to brown a bit faster than usual, so watch your recipe for the last 15 minutes or so of baking!

Soy flour can be used to replace part of the wheat flour in bread, rolls, cakes and cookies. Because it has different properties than wheat flour, it cannot be substituted for all of the flour in a recipe. If you would like to try adding soy flour to your own recipes, begin by substituting it for one-fourth to one-third of the total amount of flour.
Soy flour with fat could develop "off"
flavors if stored at room temperature, so keep it well wrapped in the refrigerator or freezer.
Soy flour:
Stir soy flour before measuring since it can become packed in its container.
Use soy flour as is, or toast lightly to enhance its nutty flavor. To toast,
put the soy flour in a dry skillet and cook over moderate heat, stirring occasionally.
Shorten baking time or lower temperature slightly when baking products
containing soy flour. They tend to brown more quickly.
Substitute soy flour for no more than 1/4 to 1/3 of the regular flour in a recipe.

Pumpkin Bread
2/3 cup sifted soy flour
1 cup sifted all-purpose flour
1/4 teaspoon baking powder
3/4 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
3/4 teaspoon salt
1/4 cup vegetable shortening
1 cup sugar
2 eggs, well beaten
3/4 cup pumpkin, canned
2 tablespoons water
Sift and measure soy flour and all-purpose flour. Measure other dry ingredients except sugar, and sift together with flours. Set aside. Cream shortening and add sugar gradually, creaming well. Add eggs and beat until light. Blend in pumpkin and water. Add dry ingredients in two portions,blending well after each addition.Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 F, for 65 mins. Remove loaf from pan immediately and cool on a wire rack. Makes 12 servings (3/4 inch slices).

There's a waffle recipe in the May issue that calls for soy flour. It looks really good.
