I have a good amount of leftover cooked scallops. Anyone have a suggestion on what to do with them?

Crepes! I'd make a bechamel or a light cheese sauce, stir some in with the scallops, wrap them up in crepes and serve wtih more sauce over the top. Yummmmmmm. I'm jealous of this problem! :)

I would use them in a salad. Mixed greens or baby spinach, maybe some green onions, roasted bell peppers, lemon juice. Whatever you have on hand.

Or, if you have frozen green peas, you could cook them, mash them with salt pepper and olive oil, mint, if you have it, and serve the scallops over the mushy peas.

Another idea, risotto. Make a basic risotto recipe, add whatever herbs or flavorings you want (like lemon and basil), and stir in the scallops at the very end just to warm them up. Yum!

I automatically think of my favorite place in town. If anyone lives in Chicago - go to the Local Shack. They serve the best Po' Boys.

Get some French bread, butter it and put it on the grill or pan.

Make some Cajun mayo - mayonnaise, lemon, capers, pinch of hot sauce, and cayenne (lots of it)- spread on the bread

Put lettuce on and then stuff the scallops in. Lots of them. Serve with cole slaw and you've got a meal...
