View Full Version : ISO Broccoli Slaw recipe

I have a bunch of broccoli stalks leftover and rather than chuck 'em, I thought I'd make a slaw with some carrots and red cabbage. Does anyone have a tasty broccoli slaw recipe they'd like to share? (I did a search and came up with zilch.) Thanks a bunch!

Here is Grace's slaw recipe for you, I did a search and it was under "Grace's slaw". I have not tried it yet myself, but it has gotten some pretty good reviews here and I think that you can use your stalks instead of broccoslaw.
1 bag Dole shredded cabbage and carrots -- (I think it's 16 oz?)
- or -
2 bags that broccoslaw stuff
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup non-fat mayo
1/4 cup buttermilk
1 1/2 tablespoons cider vinegar
2 1/2 tablespoons fresh lemon juice
Mix the dressing ingredients well in a small bowl with a wire whisk until the sugar is dissolved and the dressing is creamy. Pour over the cabbage or broccoslaw and toss together well. Cover and refrigerate 2 hours.

I like this, it came from one of the ladies at my church. I'm sorry, but the dressing amounts aren't very specific.
Broccoli Coleslaw
1 pkg broccoli/carrot coleslaw mix
1 apple, chopped
1 small can crushed pineapple, drained, reserve juice
mayonnaise
honey
pinch salt
Core and chop apple. Combine with broccoli mix and pineapple. Make dressing from mayo and honey, thinning with pineapple juice to desired consistency.
Fat-free or lite mayo works fine.

I have made Grace's recipe twice and LOVE it. I made it once with regular cabbage/carrot mix and once with broccoslaw. I highly recommend it.

This is right off the back of Mann's Broccoli Coleslaw:
12 oz Broccoli coleslaw
(the mix includes chopped broccoli, carrots, and red cabbage)
1 1/2 C. pineapple chunks
1/4 C. sliced almonds (may substitute sunflower seeds)
1 1/2 C. diced apple
1 cup refrigerated cole slaw dressing
1/4 raisins (optional)
1/2 C. pears (optional)
Thoroughly blend all ingredients.
This sounds yummy! Thanks for reminding me I had a bag of this stuff in my crisper ;-}
I like broccoli slaw mixed with low fat commercial cole slaw dressing, craisins, sunflower seeds, red pepper and red onion.

Thanks for your help! Since I didn't have any pineapple, pears, raisins or almonds, I just went with Grace's slaw recipe. It's chilling as we speak... but from what I sampled, it tastes good so far.
