Anyone have any good recipes using watercress. I couldn't resist picking up one of those bunched today with the roots attached :)

I would assume salad as a last resort but I would love to find something a little more interesting.

Sorry I don't have any specific recipes for you, but a friend in the UK once sent this link to the Watercress Society and they have about half a dozen tabs for watercress recipes (http://www.watercress.co.uk/recipes/)

The Crab Cakes on Mixed Greens with Peanut Vinaigrette from CL January 2005 was really good, and you use watercress with the mixed greens. Another favorite that comes to mind is sandwiches--I love the Smoked Turkey, Brie, Green Apple and Watercress Sandwich from CL August 2003. Another idea would be to put it on top of some kind of fish, maybe even fish tacos, for a twist? Or shrimp burritos? Hmmm. Now I'm getting hungry--Bon appetit!

I know, isn't it great? There were some tasty looking recipes, though, especially in the "speedy suppers" area. I think I'll buy a bunch this week and take one of the recipes for a spin!
