I received my order on Friday, and I've been having a blast using my new spices. I just wanted to share a really great pasta sauce.
4 chicken with sundried tomato and basil sausage links, sliced and casings removed (such as Emeril's)
1 large green pepper, sliced vertically in strips
1 small onion, sliced vertically in strips
1 T olive oil
2 cans diced tomatoes, drained
1 can tomato paste
1/2 c water
1 1/2 tsp oregano
2 tsp Italian seasoning
1-2 T sugar
1/4 c balsamic vinegar
1/2 tsp salt
dash hot sauce (optional)
Spray pan with cooking spray and cook sausage until lightly browned. Set aside. Heat oil over med heat and saute pepper and onion, stirring often, until onion is translucent. Add remaining ingredients except for vinegar and simmer on medium low for about 30 minutes. Add sausage and vinegar. Simmer an additional 10 minutes. Serve over pasta tossed with 1 tsp butter, 1 tsp olive oil, dash salt, and snipped fresh parsley. Top with freshly grated parmesan cheese.
