View Full Version : Fruit Salad Dressing???

Our playgroup is having a baby shower tomorrow and I am in charge of bringing fruit. I had a wonderful recipe that I planned to make, and after an hour of searching for it I'm giving up! I was a simple fruit salad with a "fruit" dressing, something that contained citrus to preserve the banana and apple. Does anyone have a fruit salad dressing that they are happy with? I truly appreciate any help!

This probably isn't what you're looking for but it's my favorite fruit salad recipe. Very impressive looking. At Easter I layered fresh pineapple, strawberries, kiwi, and red grapes. You can also add a little bit of lemon zest to the topping if desired.

Layered Fresh Fruit Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
bite-sized pieces of cantaloupe and/or honeydew melon
red grapes
kiwi, sliced and cut in half
sliced strawberries
fresh blueberries
white grapes
Topping:
8 ounces cream cheese -- softened
1/2 cup powdered sugar
2 Tablespoons fresh lemon juice
1/2 pint whipping cream -- whipped
Garnish:
sliced strawberries and blueberries -- optional

Layer fruits in the order listed in a large glass bowl. (I use a 4 1/2 quart Pyrex bowl.)

For the topping, with a mixer blend cream cheese, powdered sugar, and lemon juice; mix well. By hand fold in the whipped cream.

Spread this mixture over the fruit and chill.

If desired, garnish with strawberries and blueberries by placing them in a flower pattern on the top (strawberries as the petals and the blueberries as the center). Don't stir before serving.

I like to use the juice of one lime and some honey. I don't have a recipe--just squirt all the lime and then add honey to taste.

I've been making a salad dressing that I found in our newspaper that might be good on fruit.

Take one small can of mandarin oranges and dump it (undrained) into a blender or food processor. Add 1/4 c. red wine vinegar, salt, pepper, 1 envelope of Sweet n Low (it called for honey but I found that I didn't have any). While that's being blended, drizzle in 1/4 c. vegetable oil (it called for 3/4 c. but I wanted to lower the fat content).

I've been enjoying this recipe on romaine and spinich salads but I think it might also work on fruit.

There was an excellent fruit salad in CL a couple of issues ago (maybe March??). There were some reviews for it on the BB, too. It had some different fruits in it and some coconut flakes mixed in. It was more tropical with mango and pineapple- and I'd go a little lighter on the dressing, too, but overall, we really liked it. I can't remember the name. It might have even been in the Jan/Feb issue. Sorry I can't give you more info than that - at work right now.
