I have this recipe I want to make tomorrow tonight that calls for one heart of Romaine lettuce. What exactly does that mean? Is it just the whole bunch of it? The recipe says it serves two, and I want to scale it up to serve six, but I'm a little unclear on how much to use.

The heart of romaine is usually packaged (2-3 hearts per package). It doesn't have the big outer leaves of the "head" of lettuce. I usually buy the Fresh Express chopped Hearts of Romaine in the cello packs.

Andrea, I buy hearts of romaine (5-6 to a package) at Sam's Club. Alternatively, you could probably get away with using regular ol' romaine lettuce and remove the outer 6 or 7 leaves to get at the more tender ones.
