I wanted to make this for dinner this week? Has anyone tried it? It looks good!

I made the Eggplant Parm Lasagna last week. It was pretty good the first night, but much much better the second time around. I usually make lasagna ahead of time, and did this one right before cooking, so maybe that made a difference?

Well I finally made this last night and it was the best lasagna i ever made. It wasn't too soupy and it cut perfectly! It tasted really good too. My husband is not a lasagna fan and he said it was a repeater!

I made this last night and was a bit disappointed. My DH and I thought it was a bit bland. We both really like eggplant, and it's flavor did not come through; I would add more slices.
If I make this again, I think I will try a more flavorful pasta sauce (I used Muir Glen-Tomato and Herb). I would also add quite a bit more seasoning. I did add fresh garlic to the cheese mix, but it wasn't enough.
The Lasagna did hold together well and cut easily.
We'll be having the leftovers today, so maybe the flavors will have had a chance to become more pronounced.
Darn, I hate it when I'm disappointed in a recipe.
On to the other Lasagna recipes in this issue.

I made it Sunday and I really like it. However, I did kind of wonder about the amount of eggplant because I kind of messed up. I was all ready to put it together and discovered that I that I'd only bought half the cheese. So I ended up sort of cutting the recipe in half and using a square pan instead of the 9x13. But I went ahead and used all the eggplant because it was already done. And it worked out just right for the pan size. There's no way I would have had enough eggplant to do two layers of it in a 9x13 pan. So next time I make it, I'm going to use more eggplant.

I thought this lasagne was very good. I just finished the last piece today and will definitely make it again. My husband and son liked it as well.
I did do some improvising for instance I used a lot more sauce then it called for and I combined a couple o different kinds of sauces. I also used all ricotta instead of using cottage cheese.
I think this is the kind of recipe that you can play around with to suit your taste.
Try it...it's really good!

My husband and I also enjoyed this lasagna quite a bit. The only changes I made were adding extra seasonings, and I used part mozzarella and part sharp provolone. I think next time I might use a little more sauce, otherwise I would not change much.
I thought it was too bland. It really needed more garlic and overall italian flavor. I was disapointed in the eggplant-I would advise to season the breadcrumbs with additional spices.

I've made it twice. The first time it was much to bland for my taste--the second time I really doctored up the sauce with some shredded chicken breast, green and red peppers and lots of garlic and used lots of sauce. It came out divine!
