For some reason, I am in the mood for a burrito tonight and was hoping you could throw any recipes my way - I like any kind - chicken, beef, veggie, bean - just no tofu - my fiance is on a "no tofu" kick :O

I made this up just the other night - really easy & good. It serves 3 or 4.

1 can black beans drained
1 small can corn drained
1 small can tomato sauce
1 1/2 tbsp of adobo sauce (& maybe a hot pepper or 2 if you'd like )
1 chicken breast chopped

Cook chicken breast in skillet. Add other ingredients & heat about 10 minutes (until all hot.) Serve wrapped in a 10" flour tortilla with shredded cheddar & lettuce.

Makes about 7 or 8 burritos / soft tacos.

I'm sure you could add other things like onion, peppers, garlic - but it's good & really quick just the way it is.

This meatless recipe is pretty simple to follow. It smells spicy and warm as it bakes. I suggest some hot Mexican style corn as a side dish. Celery and carrot sticks can be served as a colorful salad..

Speedy Black Bean and Cheese Burritos

6 flour tortillas
2 green onions, thinly sliced
1 clove garlic, minced
1 Tbsp. vegetable oil
1 can (15 oz.) black beans, rinsed and drained
1 jar (12 oz.) of salsa, divided
2 cups (8 oz. package) of cheddar cheese, divided. **Note**You can just use one cup of cheese, divided if you wish or use a 2% shredded cheese. I have even used soy cheese quite happily**


Toppings: Your choice of sour cream, chopped ripe olives, chopped green olives, chopped jalepeno peppers and/or sliced green onions.

In a large skillet, cook onions and garlic in oil for two minutes. Add beans, 1/2 cup of salsa; heat through. Remove from heat; cool slightly. Stir in half of the cheddar cheese. Spread a 1/3 cup bean mixture down center of each tortilla. Roll up; place seam side down in a lightly sprayed 11 x 7 inch baking dish. Spoon remaining salsa evenly over the tortillas. Sprinkle the remaining cheese over the top.

Bake at 400 degrees for 15 minutes or until hot. Garnish with your choice of
the above toppings.

Here is a really yummy burrito recipe for sweet potato and black bean burritos (from Moosewood). They're delicious--and a nice change of pace from the norm.

The "Barbecue" Chicken and Black Bean Burrito from CL-12/99 is very good.

You might enjoy this one:

Low-Fat Burrito Supreme
1 large onion, chopped
1 large green pepper, chopped
1 lb. fresh mushrooms, chopped
1 Tablespoon minced garlic
1 cup fat free chicken broth
1/2 pound ground turkey breast
1 large can stewed tomatoes
1 package burrito seasoning
1 large can fat free refried beans
1/2 pound diced cooked potatoes
8 large whole wheat tortillas
1 large can tomato sauce
1 Tablespoon chili powder
1 teaspoon basil
1 cup shredded lettuce
2 large tomatoes, diced
Salsa
Fat Free Sour Cream

Preheat oven at 350 F. In large nonstick skillet over high heat, saute onion, green pepper, mushrooms and garlic in broth until half of the liquid has evaporated. In another nonstick skillet over high heat, cook turkey until done, remove from heat and rinse under hot water. Add turkey, stewed tomatoes and burrito seasoning to vegetable mixture. Reduce heat to medium, cover and simmer for 5 minutes.

Remove from heat; place equal amounts of refried beans, turkey mixture and potatoes in the center of each tortilla shell. Spread mixture over entire center, edge to edge. Roll up each shell and place in deep baking dish. In blender, mix tomato sauce, chili
powder, and basil on high for 1 to 2 minutes; pour sauce over burritos. Bake for 15-20 minutes. Garnish with lettuce, tomato, salsa, and fat free sour cream Makes 8 servings.

On a flour tortilla, spread on refried beans (or whole beans, mashed a little), add cheese and heat, in the microwave, till the cheese melts. Add salad mix, &/or whatever vegtables you have on hand. Add salsa, nonfat sour cream. Enjoy. This is super easy, and they can be made on demand.
My favorite is made with black beans and brown rice with cheddar cheese. I cook brown rice just to make these.

DmOrtega, I'm trying to add brown rice to my diet---what a great suggestion you have. I'm going to try your burrito "recipe".

Brown rice is EXCELLENT in burritos. I tend to make mine similarly to DMOrtega, only I always add some spices to the rice mixture -- usually chili powder, onions and some diced tomatoes. I also love to add a bit of chipotle with adobo...

Sometimes we serve our burritos on a bed of fresh spinach with a bit of lime and salsa.

Thanks for posting your recipe, Leanne! I make no-fuss burritos like this all the time (about once a week) and when I told a few friends, they laughed at me! Maybe it sounds too simple. I told them, "how do you think restaurants make them??" Burritos are just beans and some veggies and cheese. Yummm. Might have to make some for lunch!

slow-cooker beef burritos
possibly from sept. 99 but i'm not sure. i think it was a "slow-cooker" article, but again, who knows... anyway, they are easy and YUMMY!

Leanne Go for it. Possibly, you could post it as a thread and eventually get it published! Every book needs an angle, you might have one there!! I thought that I saw some writers and a publisher on some profiles?

Here's our simple burrito/taco/enchilada filling:

The night before (if you can store the pot in the reefer) or in the morning, in a slow cooker/crock pot place (in order):
- beef roast chunk
- big spoonful of chopped garlic out of a jar
- one big wedged onion
- one big jar of picante sauce or salsa-type stuff
Cook on low for a normal workday, high for a half-day. The meat should just fall apart when done. Shred with a fork and stir. Fill your burrito/taco/enchilada and add your favorite toppings!
