View Full Version : Pasta with Mussels and Monterey Jack

I made this (from the April 2000 issue) this weekend for a special dinner and we liked it! I did make a few substitutions: :0
1. (for a veg. version) tofu and portobello mushrooms instead of mussels;
2. blend of Swiss, cheddar and mozzarella cheese instead of Jack; and
3. as it was still a wee bit bland, I put out Romano cheese and fresh basil as garnishes.
(Guess I should change the name of the recipe since there were no mussels OR Monterey Jack cheese ...) But seriously, it was satisfying and really fit the bill for something a bit different.
We re fighting over the leftovers now ... ; )

*laughing* Oh, I love a cook who improvises!! Natasha, you did beautifully and have created a recipe/version that I would love to try being as how I cannot stomach muscles... Bravo!!!

This is one of the only reviews I found of this recipe. But I was wondering if anyone has made the recipe as written? and what did you think of it?
