I just ate the most delicious, moist tender cake!!!!!! I made it yesterday and let it set in the refrigerator until my party today. It is from "Betty Crocker's Ultimate Cake Mix Cookbook".

MANDARIN ORANGE CAKE

1 Package Betty Crocker SuperMoist yellow cake mix
1/2 cup vegetable oil
1/2 cup chopped walnuts
4 eggs
1 can (11 oz.) mandarin orange segments, undrained
Pineapple topping (below)

PINEAPPLE TOPPING

1 can (20 oz.) crushed pineapple, undrained
1 package (4 serving size) instant vanilla pudding
1/2 to 1 tsp. grated orange rind (optional) **I omitted this**
1 cup Cool Whip (thawed)

1. Heat oven to 350. Grease and flour bottom only of 13 x 9 pan.

2. Beat cake mix, oil, nuts, eggs and orange segments (with juice) in large bowl with mixer at low speed for 30 seconds. Beat on medium for 2 minutes. Pour into pan.

3. Bake 30 to 35 minutes till toothpick inserted in center comes out clean. ** I had to bake mine at total of 45 minutes**. Cool completely, about one hour. Spread pineapple topping ove top of cake. Store covered in refrigerator.

PINEAPPLE TOPPING

Mix pineapple, pudding mix,(dry) and orange peel. Gently stir in cool whip.

***This cake was devoured by my guests. They just keep saying "this is so moist, tender and so delicious**

I got this book for Christmas and just got around to really looking at the recipes closely. I did make one other cake from it so far. It is called the "Chocolate Chip Cookie Suprise Cake". It was just okay. I didn't care for the texture. It was more dense than I like and alittle dry. It tasted like an "okay" chocolate chip cake. None of my guests commented! Thankfully, I made another cherry dessert in addition to this one. I wouldn't make this one again. Just okay.

So I go to make the cake, and find I have Duncan Hines and not BC cake mixes in my cabinet...do you think they will work?

Gail, I think DH would work. The cake might now be quite as moist, because BC has pudding and DH doesn't. But with all the other stuff, I'm sure it will be great.

Thanks annagins! I have the DH with the pudding...so hopefully it will work! I'll report back later:D

Also, I have a vanilla and a lemon...I think I'll use the lemon...what do you think?

Just got around to checking the post. I agree that a DH mix should be fine maybe just not quite as moist. BC does have the "pudding in the mix". Please do post a review. I gave a piece to my neighbor who has become my dear friend. She called immediately saying she has never tasted such a moist, delicious cake!!

This is a very good cake. The recipe I have doesn't have the nuts or orange peel, and doesn't specify the brand of yellow cake mix, but otherwise seems the same. I think i got it from a co-worker 15 years ago, and I often make it as dessert for Easter, and everyone loves it (except my DH, who tolerates it, since he doesn't like sweet/cool whip type desserts). It's a very "Spring-y" cake! And it looks like I'll make it again this week for Easter, since MIL asked me to brin dessert.

Didn't make this last week...but I'm making it today for Easter Dinner dessert...can't wait as it sounds yummy:D

My Mom made this cake last week, and it was really good--very moist. I loved the combination of pineapple and orange. BTW, she did not have any mandarian oranges, so she used some OJ with regular oranges (membrane removed) instead and it worked well. She also used pecans instead of walnuts.

Not a review of the Mandarin Orange Cake, but here's another cake using a yellow cake mix that I found in a Sunset Magazine ad *many* years ago. It was a family favorite until I stopped making cakes. I might just have to try this again.

Delicious Sherry Cake

1 (1 lb. 2-1/2 oz.) package yellow cake mix
1 (3-5/8 oz.) package instant vanilla pudding
1/2 teaspoon nutmeg
4 large eggs
3/4 cup Christian Brothers cream sherry
3/4 cup vegetable oil

In large bowl combine all ingredients. Mix at low speed 1 minute, then at medium speed 3 minutes (or beat by hand 5 minutes). Turn into greased and floured 10-inch Bundt**pan. Bake in 350 degree oven 45 to 50 minutes, until springy to the touch. Cool on rack 15 minutes. Turn out onto rack to tool completely. Dust with powdered sugar, if desired.

I have had this recipe for MANY years! My aunt gave it to me under another name, but it is ABSOLUTELY one of my favorite cakes of all time! It's great during the spring and summer because you store it in the refrigerator. It's light and cool and just delicious! Plus it's VERY easy to put together. Everyone loves this cake! Try it. . .you will not be disappointed!!! (The recipe I have does not use any nuts in the cake though.)

The recipe Donna posted has no nuts listed. I think the reference was to the recipe I posted for the Mandarin Orange Cake. I've seen another version of this also without the nuts. It is fabulous!

Sorry, my post was in regards to the Mandarin Orange Cake. I've never had the Sherry Cake.
