Asian Peanut Dip: I thought this was excellent and went together in 15 minutes or less. Not too spicy but had a definite kick. Plan on another dish using the tofu because this doesn't use very much. It went great with celery, amongst other things.

Split Pea Spread: This also is a repeater...kind of like a jazzed up hummus. It took quite a while to make because of cooking the peas. However, I was making the peanut dip above inbetween so it worked out great. After the peas were cooked it finished up quickly. I served it with raw vegetables but used whole wheat pita the next day which I think tasted even better.

These were both from the April 2001 issue.
