View Full Version : ISO - Ginger Cookie With 3 Kinds of Ginger

I thought I had saved a cookie recipe from around Christmas time that used three kinds of ginger -- powdered, freshly grated and candied.
It might have come from Sara Moulton's show.

Does anybody have this recipe. It might have come from the FoodTV 12 Days of Christmas cookie list -- maybe a Sara Moulton recipe - but nothing came up on that site.

Triple Ginger Ginger Snaps

Amount Measure Ingredient -- Preparation Method

1 stick butter (½ cup)
1/2 cup solid vegetable shortening
2/3 cup granulated sugar
1/3 packed brown sugar
1 large egg
1 tablespoon finely chopped crystallized ginger
1 1/2 teaspoons grated fresh ginger
1 3/4 teaspoons baking soda
1 teaspoon vanilla extract
1/2 teaspoon ground ginger and salt
2 cups all-purpose flour
1/3 cup granulated sugar
1/3 cup coarsely chopped crystallized ginger

Heat oven to 375 degrees. Lightly grease 2 cookie sheets.

Dough: Beat butter and shortening until creamy. Beat in sugars until pale and fluffy. Add remaining ingredients except flour and beat until blended. With mixer on low speed, beat in flour until just blended.

Roll dough into 1½-inch balls, and then roll in sugar. Flatten with bottom of glass to 2-inch rounds. Top each with ½ teaspoon chopped crystallized ginger.

Bake until edges are lightly browned, 7 to 8 minutes. Cool on sheet 5 minutes before removing to a wire rack to cool completely.
Makes 40 cookies.

These only use 2 kinds of ginger, might be possible to tweak the recipe to use 3, but they are excellent like this. Made them several times and they go fast.

Double-Ginger Cookies
From Cooking Light


1 1/2 cups all-purpose flour
1 cup whole wheat flour
3/4 cup chopped crystallized ginger
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 1/4 cups sugar, divided
1/2 cup applesauce
1/4 cup vegetable oil
1 teaspoon grated lemon rind
1 tablespoon lemon juice
1/4 teaspoon vanilla extract
Cooking spray

Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 5 ingredients (flours through ground ginger); stir well with a whisk. Make a well in center of mixture. Combine 1 cup sugar, applesauce, and next 4 ingredients (applesauce through vanilla). Add to flour mixture, stirring just until moist; cover and chill dough at least 1 hour.
Preheat oven to 350°.

Lightly coat hands with flour. Shape dough into 24 balls (about 2 tablespoons each; dough will be sticky). Roll balls in 1/4 cup sugar. Place balls 2 inches apart on baking sheets coated with cooking spray. Bake at 350° for 15 minutes or until lightly browned. Cool 1 minute on pan. Remove from pan; cool completely on wire racks.

Note: These freeze well. Place cooled cookies in a heavy-duty zip-top plastic bag; store in freezer for up to 1 month. Thaw at room temperature.

Yield: 2 dozen (serving size: 1 cookie)

Ginger Snap Cookies
These use fresh ginger and candied ginger. Makes 8 dozen
(48 servings).

1 1/2 cups unsalted butter
2 cups packed brown sugar
1/2 cup molasses
2 eggs
4 1/2 cups unbleached
all-purpose flour
4 teaspoons ground ginger
4 teaspoons baking soda
1 teaspoon salt
3 tablespoons grated fresh ginger
1 cup chopped crystallized ginger


Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 Cream the butter and the brown sugar until fluffy. Add
molasses and eggs and mix well.
3 Combine flour, ground ginger, baking soda and salt and
add to butter mixture. Blend in fresh and candied ginger.
Drop by teaspoonfuls onto parchment covered baking
sheet, about 2 inches apart. Bake about 10 minutes, or until
lightly golden. Cool.

1/2 cup crystallized ginger -- chopped

Cream together butter and sugar. Beat in molasses, then egg. Sift together flour-salt. Stir into butter until blended. Add gingers. Mix well. Chill at least 2 hours. Heat oven to 350. Shape dough into 1" balls and place on sprayed baking sheets 2" apart. Bake until browned, about 10 mins. Cool on wire racks.

It's exactly the same as the recipe I posted from allrecipes, just cut in half...guess Ms Dickerson thought by changing the amounts it wasn't the same recipe :rolleyes: ...
