This goes back to March 2000, but I just made it and really liked it. I used less tomato due to the tastes of people eating it and the amount seemed fine. I would leave out the lemon rind next time as I would prefer a less pronounced lemon flavor. Also, I thought 25 minutes was a bit too long to cook the shrimp -- I would start checking at 15-20 min (although it would be tricky to check on this recipe, which is baked in a foil oven bag).

I completely agree regarding the lemon. It was too overpowering in this dish. I made a note to myself to use half as much lemon juice next time. Also, I made a note to either use a bit more feta or to at least keep the feta in bigger than normal chunks. It seemed to "disappear" into the dish during the cooking.

We liked this too. I don't think I had any lemons, so I left out the lemon rind. Looks like I didn't miss anything! I also agree with schuh....I thought the shrimp was a bit overcooked at 25 minutes. I couldn't find the foil bags, so I just baked it in a 9" square baking dish and covered it with foil and it came out great.

I love reviews where people agree with me! I feel like I actually know what I'm doing. Glad to know about doing it in a baking dish -- the foil bags are somewhat expensive and it would be nice to have an alternative.

Valchemist, your comment about the feta reminded me of an experience last week. I took my kids to a cool pizza place that has tons of pizzas to choose from. My two young boys picked (of course) cheese and pepperoni. I picked a healthy Mediterranean pizza that had feta cheese on it. My kids, who don't ordinarily have exotic tastes, kept picking the chunks of feta off my pizza and eating them. Now I know that in my household, you can never have too much feta in a recipe.

i didn't have a problem with the lemony-ness in this recipe... but i think valchemist is right - the feta did sort of disappear. i posted a review on this in another thread somewhere... my DH and i liked this dish, but decided there were other shrimp/feta/tomato recipes we liked better...

I made this last night and liked it. I used whole wheat couscous and gorgonzola. I should have used more cheese as it did disappear.

As I recall when making the dish it had scallions or something oniony in it and I found that flavor to be a bit overwhelming. Otherwise we liked it but I would omit the scallions next time.

I have made this a few times and we LOVE it! We also felt the lemon flavor was a bit much, so I don't use as much anymore. This is definately a favorite at our house and gets made every so often!
