View Full Version : Help-Lost CL Recipe from 4-5 years ago - Caribbean Chicken & Papaya Kebabs

Hi all!

I was wondering if anyone could help me. I used to have a CL recipe for caribbean chicken kebabs with papaya. It was published about 4 or 5 years ago. They were fantastic and really popular with my friends. I remember that the marinade had molasses in it and some kind of hot pepper sauce (i.e. texas pete, etc.) but I can't remember the rest of the marinade ingredients. Can anyone help?

Hi Lisa. Yes the recipe is from June 96
Caribbean Chicken & Papaya kebabs
Also that month they had many kebab recipes great for BBQ season

Black beans and yellow rice pair well with this dish
2 tab low sodium soy sauce
2 tab molasses
1 tab red wine vinegar
1 tab habanero pepper sauce
1/2 tsp ground allspice
1/8 tsp salt
1/2 pound skinned boned chicken breasts cut into 1 inch pieces
1 papaya peeled cut into 1 inch pieces
veg cooking spray
Combine first 7 ing in a bowl, stir well. COver & marinade in refrigerator 1-8 hrs. Remove chicken from bowl, reserve marinade. Bring marinade to a boil in a small saucepan. Thread chicken and papaya alternately onyo 2 (10 inch) swekers
Prepare grill. Place on grill (or broiler pan coated with cooking spray). Cook 7 mins on each side til done basting occasionally with marinade
Please soak wood skewers prior to using (10-20 mins) to avoild burning them
