woodsl,

This ice cream is one to SCREAM about! It is creamy, not tart but the lemon taste is very much there. I love it!

Here is what I did...I cut the recipe in half, (which made about 1 1/2 qt.), to fit my Cuisinart Ice Cream Maker and it worked out very well. I used 2% milk because thats all we drink in my house. I added zest of one lemon about half way during the processing time. I will make one more change the next time I make this and that will be to chill the liquid until really cold before filling the ice cream freezer to process. I think by doing this it won't take as long to freeze....just a thought. I would also like to lighten it some too but don't know what to replace the whipped cream with.

This is definitely a recipe that will be added to my favorites. http://www.cookinglight.com/bbs/biggrin.gif Thanks again for sharing.

I am glad you liked it. The way you described it is just the way I remembered it. I may dig out some CL ice cream recipes and try to figure a way to lighten it. If I do, I'll let you know how it turns out.

I believe you can substitute heavy chream with light cream or evap milk. You can sub. light cream with 2% milk, and so on down the line.

kworman,

Good idea. I know I took a Ben & Jerry's Sweet Cream Base recipe that called for 2 cups of whipping cream and 1 cup milk and substituted 2 cups Half 'N Half and 1 cup skim milk, and the recipe turned out great!!
