I bought this book several months ago and have used so many of the recipes, I thought I would share it with everyone here... Every recipe I have made from it is easy and so yummy! The best part is that they are very low in fat, and you don't even miss it because they taste so good! http://www.cookinglight.com/bbs/smile.gif

Here are a few of my favorites from this book:

Linguine Stir-Fry with Asparagus and Garlic
Baked Ziti with Meat
Salmon with Fettucine
Baked Sole Almandine

these are just a few of them... if anyone is in search of a really good low-fat cookbook, I would definately recommend this one!

BTW - it's by Lisa Shaw

Sounds great. Is this a newer book, or did you buy it awhile ago?

I bought it a couple of months ago at Borders... I think it has been around for awhile though. I just discovered low-fat cookbooks (beyond CL) last summer when my dh's dr ordered him to go on an intense low-fat diet to lower his cholesterol.

I have this cookbook but really haven't used it much. Don't really know why. Glad to know of some recipes to try. I would be interested in others you have tried and liked also. Thanks

Is this one of Steven Raichlen's cookbooks?

If he is the one who does the "everything" books, then yes... there is a LONG list of books that fall into this series.

Here are some that I plan to try in the next week:

Risotto with Vegetables
Shrimp Scampi (but w/o the clams - don't really want to deal with them this first time)
Stuffed Tomatoes

Here are a couple more recipes that have turned out well for me:
Lentil Soup
Penne w/Chicken, Broccoli and Rosemary

I have a ton more marked to try, but haven't gotten to all of them yet! I'll let you know how the "new" one's work out next week!

Thanks for the review, patsyk. You have inspired me (it doesn't take much to get me to buy cookbooks http://www.cookinglight.com/bbs/redface.gif)order one from Half.com, I should be getting it next week.

I am so glad I could recommend a good one! I know how hard it is to tell if a cookbook is going to have more than one or 2 recipes that you'll REALLY use from it before you buy it! I have plenty of cookbooks that I never really use at all! http://www.cookinglight.com/bbs/biggrin.gif

Oh, this is so true. I really need to get rid of some, but it is like pulling your own teeth. http://www.cookinglight.com/bbs/biggrin.gif My new addiction, in addition to this bb, is ordering cookbookd from half.com, they have some good stuff at great prices and the books I have gotten are in great condition! I will let you know what I think when I get it.

Hoosier65 - we just had the Shrimp Scampi from this cookbook tonight and it was VERY good! It is a very light flavor though... we like garlic, so next time I might use a bit more. I served it with a salad and bread and that was plenty! http://www.cookinglight.com/bbs/biggrin.gif
