This was dinner tonight. I roasted the tomatoes earlier in the day, and they made the apartment smell SO GOOD. I had roasted red peppers in the fridge, so I just added those to the blender without roasting my own.

I subbed cod because there wasn't any grouper at the store. The fish is prepared very simply and is a great way to showcase the sauce.

This sounds really good to me, thanks for the review. We must be drawn to the same recipes as I've noticed you are reviewing a lot of recipes on my "to-try" list (this one, the Chicken Marsala with Mustard-Mascarpone Sauce, and the Banana Pumpkin Smoothie!). Keep those reviews coming! :D

I did like beckms and roasted the tomatoes and pepper earlier in the day, and had to use catfish cause the store had no grouper. This was easy to do and it was very tasty. Served it as suggested, over Couscous Pilaf and had Sauteed Spinach with Pine Nuts and Raisins (EW-A/M/05). Very easy dinner to put together and delicious.

We had this fo dinner tonight and I substituted cod because we NEVER see grouper in the fish market out here! Loved the roasted tomato sauce but the recipe made much more than was needed. I'm going to serve the leftover sauce on some leftover polenta for lunch tomorrow.
