Just wanted to share a light version I whipped up for myself that came out marvelously:
2 cans artichokes in water, drained
2 cans white beans, rinsed, drained
1 can chick peas, drained
1 c. chopped parsley
1 bunch scallions,sliced
2 cloves garlic
drizzle of olive oil
salt and pepper to your liking
Puree everything together in the processor. I'm not sure of the nutritional info on this, but I've made it sans the chick peas, to decrease fat content, and it was still great. Enjoy!
