View Full Version : What is an Asparagus serving?

I made the Roasted Asparagus from the May issue-it was delicious and I don't really like soy or sesame oil. But it called for 9 spears per person. I have never seen asparagus measured out like that--it's usually by weight. I weighed nine spears and it was 1/2 lb. I love asparagus but that is a huge serving! I have been to homes and restaurants where you get 3-4 pieces each. For a delicacy that is expensive, 1/2 lb. seems like a big amount. Am I just too chintzy? Why didn't CL just use weight?

i dont know if this is any help to you but according to wieght watchers the asparagus is ZERO points. according to thier meal plan you can eat a whole bushel and not count it. yum. and in Jewel's post her doctor has her eating it many times during the day. i dont know exactly the benefits etc. of asparagus but i love it.

Maybe it makes a difference if the asparagus is the thin spears or the thicker ones. I love the really thin spears, but haven't seen them in the grocery store this spring, just the thicker ones.

Asparagus contains a good amount of vitamin A and is a fair source of iron and vitamins B and C.

try parboiling asp. for about 3 min. cool and drain and then add italian dressing and refrigerate. Yum!

Try cold cooked aspargus with a little Balsamic vinegar. It is absolutley delicious

I made asparagus the other night for two people. I intended to set some aside for the next day as well, but that did not happen. We each had 10 spears and that was the whole bunch that I had bought.

I made Grilled Balsamic Asparagus last night for my hubby and I, and the recipe calls for 1 lb. serving four, but it was definitely only enough for the two of us (unless we HAD to share!). I highly recommend that recipe, a reader recipe from last year.

I've made this too and it is wonderful! I can't wait until it is warm enough here to grill (just got 18" of snow yesterday, so no grilling anytime soon!)

Grilled Asparagus

1 pound asparagus
3 Tablespoons balsamic vinegar
2 Tablespoons fresh lemon juice
1 Tablespoon olive oil
1 Tablespoon low-sodium soy sauce
1/8 tsp. black pepper
cooking spray

1. Prepare grill
2. Snap off tough ends of asparagus. Combine all ingredients except cooking spray in a large zip-top plastic bag and marinate for 30 minutes. Remove asparagus from bag, and discard marinade. Place asparagus on grill rack coated with cooking spray; grill 5 minutes on each side or until aspargus is done. Yield: 4 servings

My serving size has always been to eat it until it is gone. I've never had the luxery of having a bushel, so it has never been that extreme. 4 or 5 spears would seem reasonable.

I just "discovered" asparagus. It was one of those things I thought I hated because my mom made it once (canned, with velveeta on top) and needless to say, it was gross. But I tried it this spring and it is sooo good. Boys was I missing out. Just bought 3 bunches at the farmer's market today.

Anyway, we split a bunch between the two of us. I never worry about eating too much. Asparagus, anyway.

I should have known something was amiss when I was growing up...two of the things we were not required to try was asparagus and shellfish!
