Here's mine:
Quince Upside-Down Tart
From Cooking Light
This dessert is similar to tarte Tatin, the classic upside-down apple tart from France. Quince works well here since its high pectin content helps the tart hold its shape when inverted and sliced. Quinces take longer to cook than apples, so the filling is simmered on the stovetop before baking.
1 1/2 tablespoons butter
1/4 cup sugar, divided
2 1/2 pounds quince, cored, peeled, and thinly sliced (about 5 quince)
1/4 cup honey
3 tablespoons fresh lemon juice
1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
Melt butter in a 10-inch cast-iron or large, heavy skillet over medium heat. Stir in 3 tablespoons sugar; remove from heat. Arrange quince slices spokelike on top of butter mixture, working from center of pan to edge.
Combine 1 tablespoon sugar, honey, and juice, stirring well with a whisk. Drizzle mixture evenly over quince slices. Cover pan with foil; cook over medium heat 30 minutes.
Remove pan from heat; carefully remove foil. Cool 10 minutes.
Preheat oven to 400°.
Roll dough into an 11-inch circle; place over quince mixture. Tuck edges of crust into sides of pan. Cut 2 small slits in top of dough to allow steam to escape. Bake at 400° for 20 minutes or until lightly browned. Let stand 5 minutes. Place a plate upside down on top of pan, and invert onto plate. Serve warm.
Yield: 9 servings (serving size: 1 wedge)

Probably the Lemon Blackberry Pudding Cake - so light (you can easily omit the butter and it makes NO difference) but so easy and yummy!

I remember really enjoying this one:
Snickers Cheesecake
2/3 cup chocolate graham cracker crumbs (about 5 cookie sheets)
Cooking spray
2 cups fat-free cottage cheese
1 (8-ounce) tub light cream cheese
3/4 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup fat-free sour cream
1/4 cup all-purpose flour
2 teaspoons vanilla extract
2 large eggs
2 large egg whites
1/4 cup fat-free caramel sundae syrup, divided
2 (2.07-ounce) chocolate-coated caramel-peanut nougat bars (such as Snickers), chopped and divided
Preheat oven to 300°.
Sprinkle crumbs into bottom and halfway up sides of a 9-inch springform pan coated with cooking spray.
Combine cheeses in a food processor; process 2 minutes or until smooth. Add brown sugar and next 6 ingredients (brown sugar through egg whites); process just until blended. Pour half of batter into prepared pan. Drizzle with 2 tablespoons syrup; sprinkle with half of chopped candy bar. Pour remaining batter into pan; drizzle with 2 tablespoons syrup. Bake at 300° for 50 minutes. Sprinkle with remaining chopped candy bar; bake 10 minutes or until almost set. Turn oven off; let cheesecake stand for 1 hour in oven with door closed. Remove cheesecake from oven; cool to room temperature. Cover and chill at least 8 hours.

Chocolate Decadence
Chocolate Chunk Bread Pudding
Blueberry Peach Cobbler
Texas Sheet Cake
Lemonade Layer Cake
Italian Creme Cake
Coconut Cake

Chocolate Decadence Chocolate Decadence Chocolate Decadence.
Hmmm, after much thought, I'll pick Chocolate Decadence as my favourite.
I second the Tiramisu Anacapri! Wow! So light tasting! I also agree with Texas Sheet Cake and the Italian Creme Cake. Wow! Wow! and Wow!
But I'd like to add the Lemon Squares from 2001 (I think). They're really good and really lemony. We've made them with lime/lime juice and they also turn out really well with those subs.
I must have missed Mandarin Cream Delight---what's it like? When was it published?

My notes: the crust was a bit hard, but I liked it and would use it again. I used 3 cans of oranges. maybe use 4 next time. I left off the cool whip. don thinks this is really good, I thought it was good. so I'd make it again. very easy.

Made the Praline Pudding Cake last night ... it was good, but just not a keeper for us.
I haven't made that many CL recipes, but the Cinnamon Apple Cake is a definite standout.
Seems I'll have to get working on the list growing on this thread. ;)

everyone's tastes are different, obviously... I haven't tried the praline pudding cake but I really want to. I thought the cinnamon apple cake was ok, but nothing special. I didn't like the lemon bars but loved the lemon buttercrunch bars.
other favorites are:
blueberry lemon poundcake
red velvet cake
texas sheet cake
bourbon brownies

Definitely. And with so many recipes out there to try, I'll admit I'm a little stricter on the criteria for a keeper, you know?
The apple cake ... I add more apples than the recipe calls for, and it turns out extra moist. Not sure if it's sweet enough to be labeled a dessert though.
Don't get me wrong, the Praline Pudding Cake was good, we just have a few others we like better. :)

My favorite is definitely the Triple Hazelnut Cheesecake. I've taken it to many different functions and nobody ever has a clue that it is light.
I also love the White Russian Tiramisu, Chocolate Tofu Mousse and Italian Creme Cake.

My CL faves:

yeah. I thought it was good but not great.
oh, I forgot to list the german chocolate bundt cake (using double streusel) to my list. but then, if you use the double struesel it isn't really the same recipe. so I don't know if that is allowed. I liked the white russian tiramisu, too.

Easy Lemon Squares are my favorite!
Blueberry Lemon Poundcake - hands down!
I also really like those mocha toffee brownies from a few months ago. I've made those about six times, which is almost a record for me! ;)
These are all desserts that I've made several times each:
Chocolate Hazelnut Torte (I've also made it as a kosher-for-Passover dessert by subbing matzo meal for the flour, and it comes out great!)
Cinnamon Apple Cake
Mocha Pudding Cake
Lemonade Layer Cake (but don't like the CL frosting that goes with it -- I use lemon curd between the layers, and a cream cheese frosting from Epicurious)
Only made the Individual Chocolate Souffles once, but they were divine.
I've been intending to make the Triple Hazelnut Cheesecake forever.

Has anyone made the orange marmalade cake that was on the cover a while back? Sorry  can't remember the issue. I also love the Mandarin Cream Delight and the white chocolate/raspberry cheesecake. Did they ever publish a recipe for strawberry pie? I'd love to have a light strawberry pie recipe!

Yes, I made the orange marmalade cake when it came out. I think maybe it was a November issue. I thought it was very good, although a little too sweet for my taste. I haven't made it again but I would with maybe a few minor changes.
The CL dessert that I have made by far more than any other is the basic angel food cake. I love that recipe.

the Triple Hazelnut Cheesecake. The Buttermilk Apple pie. The pie is much better with a real piecrust, not a package one, but it tastes great & is gorgeous besides. Sour cream Cheesecake.
I love tiramisu in general but have never been able to find the right kind of ladyfingers to make it. Maybe it's time to start another search.
