SIDE DISHES W/EASY PESTO SALMON??

What are some side dishes you guys have served with Lori's Easy Pesto Salmon? I'm planning on having it for dinner tonight or at least dinner this weekend.

I would think a rice dish and veggies would be good, maybe with fresh fruit for dessert??? Or maybe pasta with olive oil and fresh parmesan (to go with the pesto)

I've served this twice now (I can tell it's going to be a favorite easy but elegant dish to serve to guests) and I've served it with one of the Near East grain combos and a zucchini-pecan sauté. Thanks again Lorilei!

As I leaf through the May issue, there is a recipe called Spring Risotto with Peas and Asparagus that sounds like it would be good with the salmon.

The lemony orzo (which I think CL slated to be served with Greek meatballs) is excellent with any fish, and I like it particularly with salmon.

I like this dish with fresh broccoli... sauteed spinach... or just a nice big fresh green salad http://www.cookinglight.com/bbs/smile.gif
