Hiya everyone. Here is a recipe that I posted here a long time ago under my old member name of Gianduja33. I have been making these truffle cookies for a long time and they are always a big hit at family gatherings and at parties at friends houses. They are easy to make as well. I posted this recipe in response to a post by someone looking for an easy and quick chocolate dessert recipe for her husband to have as a snack after dinner. I have seen it floating around the boards here and there posted by other members that tried it and said that they liked it as well. I thought since easter is passed you could probably make these cookies with all of the pieces of leftover chocolate easter bunnies floating around! LOL!

Oh boy I have this really good recipe for you. There are these chocolate cookies that I make that are easy and they come out good. You basically make the dough in a pot over the stove and then bake them on a cookie sheet in the oven. You have to eat them warm. Theyre a real chocolate lovers cookie.

Heres the recipe:
Mocha Truffle Cookies

1/2 c. butter
1/2 c. choc. chips
Melt in a saucepan over medium heat. Take off heat and add:

1 Tbsp coffee syrup (take 1/4 cup instant coffee and add 1-2 Tbsp hot
water to form s syrup)
3/4 c. sugar
3/4 c. brown sugar
Mix to combine and then add:

2 eggs
2 tsp. vanilla
Mix to combine and then add:

1/3 c. cocoa powder
1/2 tsp. baking powder
1/4 tsp. salt
2 c. flour
Mix to combine and lastly add:

1c. chocolate chips

Drop by teaspoonfulls onto a baking sheet lined with baking parchment and bake for exactly 8-9 minutes at 350*. The cookies will be puffed up and look dry on top. Do not over bake or they will not be good! They are moist and rich inside and best eaten warm out of the oven. Dust with powdered sugar. You will LUUV them! YUM!

You can even make the batter ahead of time and refrigerate. Let the batter sit for a while out of the fridge and come up to room temp a bit before baking if you make it ahead of time.
