I saw an idea for a yummy sounding spinach salad on a menu from Missindi's blog. The salad called for a cinnamon viniagrette. Does anyone have a recipe or ideas how to make one. I'm thinking just white wine vinegar, olive oil, sugar and cinnamon?

Here's the recipe. I just made this again for Easter and everyone loved it.

Fresh Spinach-and-Apple Salad with Cinnamon Vinaigrette
Serving Size : 4 Preparation Time :0:00
Categories : Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------

2 medium apples, thinly sliced
6 cups torn spinach leaves
1/4 cup honey
3 tablespoons vegetable oil
2 teaspoons apple cider vinegar
1/2 teaspoon dried mustard (I used Dijon)
1/4 teaspoons cinnamon
1 garlic clove, pressed
1/8 teaspoon salt

Combine spinach and apples in a serving bowl. Whisk together honey and
next 6 ingredients until well blended. Pour mixture over salad, tossing
gently. Serve immediately.

I just had to add...this recipe is so amazingly yummy! I rarely repeat recipes (so many new ones out there to try! LOL), but I've made this one so many times I've lost count!

It's really good too if you omit the apples and add mandarin oranges, feta cheese, pecans and a little thinly sliced red onion!

I also have to add that I also made this for Easter. It is so-o-o GOOD!. It's that cinnamon thing...

Hey shoezoo - glad you're reading the blog. :D

The first time I had that salad, I put up a post here, trying to find a recipe for it, and someone pointed me to this dressing. It's close. The chopped apple (from the salad I had) was also tossed in the dressing before it was added to the salad.

Cinnamon Vinaigrette:
1/3 cup olive oil
1/4 cup lemon juice
2 tablespoons orange juice
2 1/2 teaspoons sugar
1 teaspoon McCormick® Ground Cinnamon
1/2 teaspoon McCormick® Ground Cumin
1/8 teaspoon McCormick® Ground Red Pepper
1/8 teaspoon salt

Your blog is on my favorites so I try to peek at it daily. I've tried to post a message and it doesn't seem to work. Thanks for the daily cooking inspiration.I'll try both of these dressings. Thanks

I made a spinach salad last night with spinach, sugared pecans, gorgonzola, sliced green apples, craisins and the first cinnamon vinaigrette from southern living. It was To Die For. My dh tried to eat the whole serving bowl of salad.
