I'd like to make this for dinner, but have misplaced the issue it's in--May 2000 page 179. Can someone post? TIA!

Here you go. I have to make this again some time too...it was good. I just typed it into Mastercook and I noticed that the nutritional info is different from the one in the magazine. Let me know if you want/need the magazine nurtritional info.

Broiled Salmon with Honey and Vermouth

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 tablespoons honey
2 tablespoons dry vermouth -- or white wine
1 1/2 teaspoons ginger -- peeled and grated
1 1/2 teaspoons Dijon mustard -- country style
1/8 teaspoon salt
1/8 teaspoon mustard
2 6-ounce salmon fillets -- about 1 inch thick
cooking spray

Preheat broiler.

Combine first 6 ingredients in a small bowl; stir with a whisk. Place salmon on a broiler coated with cooking spray; brush with half of honey mixture. Broil 8 minutes or until fish flakes easily when tested with a fork, basting frequently with remaining honey mixture.

Did you guys actually use the vermouth or did you substitute the white wine? The recipe sounds fabulous, can't wait to try it.

I think I used vermouth. I usually do (in general) since I'm usually just cooking for two and I don't always have (or want) to open a bottle of wine just for a couple tablespoons in a recipe.

I used vermouth -- I don't think the wine would offer as much flavor, but it would probably still be good.

Made this last night for dinner and it was SOOOOOOOOO good. DH said it was some of the best salmon he's ever had (That is saying alot since he was born in Alaska!) I used vermouth and served it with the garlicky rice and a salad. Definately a thumbs up!!

I found this oldie on the recipe finder this afternoon and since I had all the ingredients on hand it made for a really quick-to-prepare dinner-for-one. I love simple recipes taht are easy to halve :). I think this one would also work on the grill.
