I made the mushroom stroganoff last night and it was amazingly tasty! I missed the first thread, but caught it when Lisa posted it here. I am trying to add more soy to my diet and when I have tofu, I like it to be inconspicuous. It definitely is in this recipe and I like the fact that it thickens the sauce up nicely and you don't have to deal with flour or cornstarch.

Since I had to haul out my food processor to make the sauce, I used it for the veggies too and the dish came together nicely. So Lisa, have you been using this as a vehicle to hide tofu from Cory?? ;)

Yay! I need to make it again, it's been ages. Cory wouldn't touch it with a ten-foot fork because of the mushrooms. Yum, more for me. ;)

Oh mushrooms, that's right, there are lots of people who are intimidated by them. And here I thought that it could be the tofu. ;)
