This was supper last night: Jerk Chicken (from an old "Southern Living") and two from CL: Double-Mango Salad from April 2001, page 206 and Chickpea-and-Corn Patties from page 140 July/August 1998.
Double Mango Salad was good. If you don't like sweet(er) things mixed with not-as-sweet things this may not be for you. My husband and I both liked this. The mango dressing was a little thicker than I expected, but I still liked it. Next time I make this I will use ground coriander (I had whole coriander seed and put it in the food processor thinking it would get "processed" but it didn't really.) I also omitted the nuts.
I also liked the Chickpea-and-Corn Patties . Definately needs a salsa of some sort, or it will probably be too dry. My food processor is a little small, so I had to process in batches...I processed a little more than called for in the recipe, but I wanted to. My coating didn't brown/toast nicely like in the picture....maybe a bit more oil and/or a lower temperature would've helped? I'll probably make this one again too, sometime.
As an aside, and totally off topic, did anyone else get a little chuckle out of the ad on page 155 for "Ear Planes" ear plugs in the April 2001 issue? I know it can be a painful problem, but I've never seen anyone on a plane look like that. It reminded me of the movie "Fight Club"
