This weekend was a big cooking weekend. It was my husband's birthday and since we went to the circus last weekend, I decided to cook him his favorite meal as well as my usual weekend feast http://www.cookinglight.com/bbs/biggrin.gif
Friday was the <B>Greek Burgers with Feta Aioli<B>....YUMMMMMMMMMMMY is all I have to say. Raves all around and this will be a summer repeater http://www.cookinglight.com/bbs/smile.gif
Saturday was the <B>Wild Mushroom & Spinach Lasagna with Goat Cheese Sauce</B>. I have that review in the appropriate thread but the reader's digest version is good but I was disappointed.
Sunday was Standing Rib Roast ....I got this recipe from someone on the board and I just wanted to say THANK YOU!!! I couldn't find the thread but it was delicious. To zing it up I added the mustard sauce from epicurious.com's recipe for <B>filet mignon with mustard sauce</B>. I served it with roasted potatoes and root vegetables. I took the basic recipe provided in the letters section of CL May 01 and added fresh garlic, fresh parsley, shallots, dry thyme and a dash of balsamic vinegar...delicious! I also did a batch of Yorkshire Pudding which for the first time in my many attempts, came out right!
For dessert, we had the <b>Mandarin Cream Delight</B> that was posted on this board. The is a definite repeater with changes. 1)I did not like the crust. Yuck. Next time I'll do it with a graham cracker crust. 2)I did as one person suggested and added 1 can of oranges...next time I'll do 4 instead of 3 cans and 3)next time I will do the instant vanilla instead of sugar free...the asparatime taste was very strong in this one and I don't want the bitter aftertaste to something so delicious!
All in all, I successful cooking weekend!
