Hello everyone, I know this site, especially under the search, has some great brunch recipes...However, Our Cooking Club is having a brunch theme and it started my wheels turning...While waiting to eat, what are some great BRUNCH APPETIZERS to munch on...are there such a thing???? (Aside from eating all of the muffins and fruit being made http://www.cookinglight.com/bbs/smile.gif )

Although I'm certain you'll get some nifty ideas from the newer members, I know for a fact we've got LOADS of threads on appetizers in the active forum as well as the popular threads and general archives. I know, because appetizers happen to be one of my "things" and I've contributed quite a few myself. Try running a search on appetizers. You will find a virtual treasure trove of ideas.

Another idea is to do some mini frittatas. All you really need to do is beat your eggs like you're going to make scrambled eggs and add whatever you'd like - chopped ham, bacon, chives, cheddar cheese, veggies, etc. Then you bake them in mini-muffin tins. Very easy and yummy. I have a recipe if you need one.

How about a glass of champagne and some chocolate covered strawberries?
Mini Bagels with cream cheese, red onion, and lox would make good bite-sized appetizers.
You could make mini crepes and fill them with all sorts of things(cream cheese and fruit, cheddar cheese and eggs, etc.), you could make them sweet or savory.
How about those little sausage bits that so many people make, you could serve them on english muffins.
Just a few ideas!

How about bloody mary's with a nice veggie garnish? Or mimosa's are always good.

How about chilled, blanched asparagus spears wrapped in prosciutto and served with a vinegarette?

That reminds me....prosciutto is wonderful wrapped around melon...the salt and sweet go well together.

I often do a "first course" parfait with layers of strawberry yogurt, cubed mango and granola. I layer these in a champagne flute but you could use a bowl or any other glass. This looks very pretty and is healthy, too.

I made these for Xmas Eve dinner, and they were a BIG hit.

Smoked Salmon Roulades
1 lb smoked salmon cut into 8 slices
1 c. cream cheese
6 kirby cucumbers 1 " diameter
Lay each slice of salmon out and spread 2 T c. cheese, roll up jelly roll style into even 1" thick rolls. Wrap each in plastic wrap and refrigerate for 1 hour to firm the roulades. Wash cucumbers dry well. Trim ends and cut into 1/4 " rounds. Unwrap roulades and cut each into 1/4" rounds. Place 1 round on each cucumber and serve. Makes 18

I second Gail's suggestion to try a search. There's some really great stuff out there, including a killer recipe or two for spanikopita (which makes a great brunch appetizer... eggs and spinach! mmm.)
You might think about doing variations on traditional "dinner" appetizers --
"Pigs" in a blanket made with mini pancakes wrapped around low-fat or veggie sausages and served with syrup dipping sauce
Bacon-wrapped melon slices would go over well in the morning http://www.cookinglight.com/bbs/smile.gif
Why not try stuffed mushroom caps -- stuffed with scrambled eggs or creamed cheese?

Thanks for the great suggestions everyone, the mini bagels, crepes, pancakes, etc...all sound great....and thanks grace for the salmon recipe!!!....
Gail, your right, I should have done an appetizer search...I was just thinking BRUNCH :O i have gotten so many great appetizer recipes from the search in the past...I didn't think about tweeking (sp) them a bit to make them suitable for brunch...thanks for the suggestion!

My Sister in law made this recipe as an appetizer and everyone loved them. Make sure to use a Mini Muffin pan.
Salsa Bites
Recipe By : Recipes from the Heart Cookbook by The Pampered Chef
Serving Size : 24
8 ounces cream cheese -- softened
1/3 cup thick and chunky salsa
2 large eggs -- lightly beaten
1/2 cup shredded cheddar cheese
2 tablespoons pitted black ripe olives -- chopped
1 tablespoon green onion -- chopped
1 clove garlic
Additional salsa for topping -- optional
Preheat oven to 350° F. and lightly spray 24 mini-muffin cups with vegetable oil spray.
In a large bowl, beat cream cheese until smooth. Blend in salsa and eggs. Stir in cheddar cheese, olives, onion and garlic.
Fill mini muffin cups to the top with the cream cheese mixture. Bake 15-18 minutes or until centers are set. Remove from oven; cool in pan 5 minutes. Remove from pan and finish cooling on a wire rack.
Top with additional salsa or sour cream just before serving, if desired.

Pinwheel Bites
Recipe By :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup pepperoni slices -- chopped
1/2 cup shredded mozzarella cheese
1/4 teaspoon oregano
1 egg -- divided
8 ounces pillsbury crescent roll
Preheat oven to 375
Mix cheese, pepperoni, oregano, and egg yolk.
Seperate crescents into four rectangles, pressing remaining perforations to seal.
Spread 3 Tablespoons of filling on each rectangle.
Roll up from short end, pinching to seal.
Place on ungreased cookie sheet and brush with egg white.
Bake for 12-15 minutes until golden.
NOTES : This recipe is from a woman in my bunko group...You can also make a variation of these for brunch. Just replace the mozzerella and pepperoni with Canadian bacon and Cheddar.
