Good morning all http://www.cookinglight.com/bbs/smile.gif Just wondering if anyone has tried the buttermilk recipes, specifically the apple coffecake one? Looks good but I do think it's kind of strange that the apples are cooked! Thanks and have a super day!

I made the old fashioned crumb cake. It was very good and I will make it again.

I made the buttermilk apple coffee cake it turned out great-I believe cooking the apples softens them, I have also cooked apples in a CL caramel apple pie recipie.

I also made the apple coffee cake and it was great! I took it to work and my coworkers devoured it. It looks very professional and tastes delicious! I'd definitely make this again.

As I was wanting to use up some buttermilk in order to clean out the fridge, I tried the cranberry-blueberry muffins and thought they were good, but nothing fabulous, and my husband didn't seem to care for them a great deal. Instead of orange rind, I threw in some lemon peel...perhaps this made a difference. They are worth a try, but probably not something I'll run out to make again. Maybe if I'm needing to use up more buttermilk!

I made the Buttermilk-Apple Coffee Cake awhile ago and we really liked it. Last night I made Apricot Almond Muffins. They are in the April '01 issue also, but not in the article about buttermilk, (although they use 1 cup of it). These were great and they looked nice... the tops were sprinkled with almonds and sugar and inside was hidden a bit of jam with almond extract. Very good! I still have some buttermilk to use up so tomorrow I'm making the Buttermilk Crumb Cake. Glad to hear that one is good too!

i made the apple coffee cake and the cranberry orange muffins this weekend. both were very tasty and we plan to make them again.

i made the cake in a 9" pan, since i didn't have an 8". i just reduced the baking time by about 5 minutes so it wouldn't get overdone. very tasty & light, although i think my 2 favorite apple cakes are still the cinnamon apple cake and the honeyed apple torte...

even my DH liked the muffins and he doesn't like dried cranberries. we couldn't find dried blueberries, so i just put in 1/2 c dried cranberries instead. we're going to look for some dried blueberries this week...maybe we'll try a blueberry-lemon variation of the muffins.
