Okay- I bought some boneless pork tenderloins (I think they are actually medallions) to try to cook pork for the first time http://www.cookinglight.com/bbs/smile.gif ..... any suggestions on a good easy recipe?

Funny you should ask.Last night I didn't know what to do with the pork tenderloin that I had taken out, so I roasted it in the oven with a little salt and pepper and made the Fingerlicking-Peanut sauce that is supposed to go with pasta from the April issue and served the sauce over the pork and the whole thing over rice. It was delicious! Truth be told I used cashew butter instead of peanut butter because I am allergic to peanuts, but the sauce was great. Hope this helps!

I got a ton of pork tenderloin recipes when I posted a similar message. However, I bought the whole loin and not the medallions. Try this link.

One of the best pork tenderloin recipes I've had is the grilled pork tenderloin with apple-ginger sauce from the new May issue of CL. I reviewed it in another post -- yummy!

A while back in CL there was a recipe for Pork Tenderloin stir-fried with green beans and either peanuts or cashews. It had an Oriental flavor. It was quite good. Let me know if you need it and I'll try to dig it up (although I'm behind on recipes I've been meaning to post).

I am not cookingmonkey, but here is the recipe. I haven't tried it, but the sauce looks similar to the sauce for Peanutty Noodles. We had the Peanutty Noodles a couple of days ago and they were just awesome! But that is a whole different thread. Suffice it to say that the sauce should be great.

Fettuccine and Tofu With Finger-licking Peanut Sauce
Recipe By :Cooking Light Magazine. April 2001. Page: 127.

Categories : Pasta
Amount Measure Ingredient -- Preparation Method

1/2 cup fat free chicken broth
1/4 cup chunky peanut butter
1/4 cup low-sodium soy sauce
3 tablespoons brown sugar
2 tablespoons rice vinegar
2 teaspoons grated peeled fresh ginger
2 teaspoons chile paste with garlic
4 clove garlic -- minced
8 ounces fettucine
1 pound firm tofu -- drained and cubed
1 cup sliced green onions -- 2 inch
1 cup shredded carrot
Directions.
1. Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently. Remove from heat.
2. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently. Yield: 4 servings (serving size: 2 cups).
Per Serving (excluding unknown items): 459 Calories; 14g Fat (26.7% calories from fat); 24g Protein; 64g Carbohydrate; 5g Dietary Fiber; 0mg Cholesterol; 788mg Sodium. Exchanges: 3 1/2 Grain(Starch); 3 Lean Meat; 1 1/2 Vegetable; 2 Fat; 1/2 Other Carbohydrates.
NOTES :
This dish has endless variations: Substitute chicken, pork, or shrimp for the tofu and almost any kind of pasta for the fettuccine. Or add vegetables of your choice.
