Pesto Salmon: yummy and easy. Coffee cake: made without the almond extract and almonds -very moist and tasty.

I made the Easy Pesto Salmon last night and it was so excellent. I actually made the pesto a couple of weeks ago and froze it, and last night I defrosted it {pesto) in the microwave. It turned out wonderful.
Yum!!! I will be making this on a regular basis, especially with the convenience of freezing small batches of pesto.

I am in thorough agreement with you on both recipes and they have been the only ones from April that I have gotten around to trying!!

I am so glad to see someone tried this recipe as I had marked it to try this month as well! I have been trying to find more fish recipes so that we can cut down on eating chicken at every meal! And I am happy to hear how easy this one is - I'll definately have to try it next week!

One other question... what did you serve with it? The picture in CL shows it with rice. Any veggie recommendation beyond salad - we have a salad with dinner every night anyway.

patsyk, I served it over rice and had roasted broccoli. Asparagus would be good too.

I also made the buttermilk cake minus almonds just added some walnuts made it for dinner Wednesday. Also made the asopao de pollo....both good! http://www.cookinglight.com/bbs/smile.gif

wendyw - how did you roast the broccoli? I have never heard of doing that... I have steamed it to death and this sounds like a nice change from the ordinary! http://www.cookinglight.com/bbs/smile.gif

I made the creamed spinach that was posted on a recent thread and a wild rice medley. I think I overdid it through, it was a very rich meal. I think plain steamed green veggies (broccoli, asparagus, etc.) would be good with either the brown rice suggested, or maybe a cous cous.

I madde the easy pesto salmon last night. It was VERY easy and my DH loved it. The only change I made was to exclude the oil all together and just go with the cooking spray. Thanks for the recipe.

patsyk, There are a few threads on this. I do what S does, so if you look up roasted broccoli w/her user name, you will find it.
I have never been able to successfully copy threads, otherwise I would do it. It is great, I'm addicted to it and have it at least twice a week.

I haven't made the Salmon yet, but I did make the Buttermilk Apple Coffecake. Yum!!! I made it just as the recipe says -- with almonds and almond extract, and I thought it was wonderful. I took it to my sister-in-law's for Easter, and between three adults and two kids (ages 4 and 6) we ate all but one piece in one sitting!

Well, I made the Easy Pesto Salmon tonight and it was VERY GOOD! My dh liked it, but I think he wanted a little more flavor - this coming from the man who puts red pepper flakes in everything he cooks! LOL!
One other question on this recipe... did everyone else really put the pesto in the food processor until it was completely smooth, or just slightly smooth... I did it until completely smooth, but it sure didn't look like the picture in the magazine!

i made the buttermilk apple cake yesterday to bring into work last night. I thought it was wonderful. i loved the flavor from the almonds and almond extract with the apple. Well it was scarfed down quickly there and i got lots of positive reviews. Its so funny because i bring in my cooking light leftovers for my lunch people always wander into the lounge to see what smells so good from the microwave. Then they see what i have and they turn thier noses up at my tofu,quinoa,frittattas,polenta etc. I cant believe there is still so many folks out there that are so closed minded with food! i am glad i have such a fantastic support group here on this BB.
